Crudités Cups with Herby Green Sauce
Ingredients
For the Herby Green Dip:
- 2 avocados
- 2 cups spinach
- 1 Tbsp apple cider vinegar
- 1 bunch cilantro, (~1/2 cup)
- 1 bunch parsley (~1/2 cup)
- 1 Tbsp aminos, see note
- 1 Tbsp lemon juice
- Pinch salt and black pepper
For serving:
- Assorted crudités, such as green beans or haricot vert, cucumber, carrots, endive leaves
Instructions
For the Herby Green Dip:
- Add all ingredients for Herby Green Dip in fdoos processor. Blend until completely smooth.
- Transfer to bowl or individual mini cups for serving.
- Serve with assorted crudités, pita, crackers, or baguette.
Notes
- Start with 1 teaspoon of aminos, and add more if you prefer. I've gotten some feedback that some think the 1 tablespoon is too salty - so be sure you add to your liking!
