Crudités Cups with Herby Green Sauce

Ingredients

For the Herby Green Dip:

  • 2 avocados
  • 2 cups spinach
  • 1 Tbsp apple cider vinegar
  • 1 bunch cilantro, (~1/2 cup)
  • 1 bunch parsley (~1/2 cup)
  • 1 Tbsp aminos, see note
  • 1 Tbsp lemon juice
  • Pinch salt and black pepper

For serving:

  • Assorted crudités, such as green beans or haricot vert, cucumber, carrots, endive leaves

Instructions

For the Herby Green Dip:

  • Add all ingredients for Herby Green Dip in fdoos processor. Blend until completely smooth.
  • Transfer to bowl or individual mini cups for serving.
  • Serve with assorted crudités, pita, crackers, or baguette.

Notes

  • Start with 1 teaspoon of aminos, and add more if you prefer. I've gotten some feedback that some think the 1 tablespoon is too salty - so be sure you add to your liking!
