It’s one of those side dishes on the summer BBQ spread that catches my eye first. Past the relish tray, the watermelon, and the pasta salads (those are second in my heart).
Yes. When I see potato salad on the lineup I know it’s going to be a full plate kinda day.
BUT YOU GUYS. What happens when you combine potato salad + potato CHIPS + pickles?! Absolute PURE MAGIC.
There are few words that can explain the deliciousness that is this potato salad. But let me see if I can try…

How To Make This Dill Pickle Potato Chip Potato Salad
- In a large bowl, combine the apple cider vinegar and sugar, whisking until sugar dissolves. Place cooked potatoes in bowl, and toss thoroughly to combine. Keep in refrigerator for at least 30 minutes.
- Meanwhile, prepare remaining ingredients. Chop green onions, hardboiled eggs, dill pickles, and celery. Additionally, mix mayo, greek yogurt, and salt.
- Once potatoes are chilled, add green onions, hardboiled eggs, and celery to bowl. Top with mayo mixture. Mix completely. Add 2 cups dill pickle potato chips and 1/4 cup fresh dill, mix to combine.
- Allow to chill for 1 hour. Top with remaining 1/4 cup potato chips and chopped dill, serve and enjoy!

Ingredients
- 5 cups yellow potatoes, cubed in to bite sized pieces and boiled until fork tender
- 3 tsp apple cider vinegar
- 1-2 tsp sugar
- 1/4 cup green onions, chopped
- 5-6 hardboiled eggs, chopped
- 1/4 cup celery, chopped
- 1-1 1/2 cups dill pickles, chopped
- 1 cup mayonnaise
- 1/2 cup Greek yogurt
- 1 tsp salt
- 2 1/4 cups dill pickle potato chips, crushed and divided
- 1/4 cup fresh dill chopped
Instructions
