As I’ve been sharing in my educational “So Happy In The Kitchen” series, there is no better time to be enjoying fresh produce than right now! The markets are brimming with freshly picked fruits, vegetables, and herbs that are begging to be consumed as quickly as possible.
The month of August in Minnesota means that it’s summer corn season. Many growers are practically trying to give it away: it won’t be easy to walk away from your Farmer’s Market with at least 2 dozen ears. This Fresh Corn Salsa is an excellent and delicious way to use it all up! Read on to learn how to make this incredibly simple dip.
How To Make Corn Salsa
This Corn Salsa requires just 6 whole ingredients and 2 spices, though it packs a wild amount of flavor! Here’s what you’ll need:
- Corn: Of course! The kernels slightly tenderize after the cobs get a quick dip in boiling water. They’re then sliced from the cob yielding a pile of summer gold.
- Red Pepper: Adding delicate flavor and a pop of freshness, red pepper is a non-negotiable in this dip!
- Red Onion: A Mexican-inspired dip wouldn’t be as delicious without the addition of red onion!
- Cilantro: Adding fresh color and flavor, cilantro can be a polarizing ingredient. Feel free to omit if you aren’t a fan!
- Lime Juice: A squeeze of fresh lime juice gives the acidity that this dish needs.
- Jalapeno: Spice is nice! Remove the ribs and seeds of the pepper for less heat, although I prefer it spicy!
- Cumin + Salt: Cumin adds smokiness while salt rounds everything out. Don’t forget these two!
How To Serve Fresh Corn Salsa
While the most obvious way to serve this delicious Fresh Corn Salsa is with a large bowl of salty tortilla chips and crisp and cool beer, it makes a delicious addition to the following dishes, too!

Fresh Corn Salsa
Ingredients
- 8 cobs corn, shucked
- 1 red bell pepper, chopped
- 1/3 cup red onion chopped
- 1/2 cup cilantro, chopped
- 2 limes, juiced
- 1 jalapeno, minced
- 1 tsp cumin
- 1 tsp salt
Instructions
- Place corn cobs in a pot of simmering water for 5 minutes. As the corn cooks, chop the remaining ingredients.
- Once the corn has cooked and it's cooled, place a small ramekin or bowl inverted into a large bowl. Place one corn cob on the flat top of the ramekin, and using your knife, cut the kernels from the cob. Doing this keeps the corn contained in one place as opposed to landing all over your counter!
- Add the remaining ingredients with the corn and toss to combine. Serve with tortilla chips!
