This Garlicky Chicken Socca Flatbread is an incredibly flavorful, simple, and nutritious meal that you have to try! Chickpea flour is the base of this socca, which is topped with garlic sauce, ground chicken, sauteed spinach and tomatoes, olives, and dill. 

But, what is socca? How do you make it? What does it taste like? Read on to learn the answers to these questions and how to make this tasty meal yourself.

What Is Socca?

Socca is an unleavened pancake or crepe made from chickpea flour. It’s dense yet light, offering a blank canvas for any type of ingredients you like. 

The origin of this recipe can be traced to Italy as well as France. Given the use of chickpea flour (which is protein-packed!), this is a nice gluten-free option for those limiting their intake of gluten or have any intolerance or allergy. 

How To Make Socca

  1. Preheat oven to 450 degrees. Add a 9-10 inch cast iron skillet to the oven as it’s heating up.
  2. Meanwhile, prepare the socca dough. In a large mixing bowl combine chickpea flour, salt, garlic powder, and pepper. Whisk to combine.
  3. Add water and 1 tablespoon olive oil, whisking to combine. The dough will be very soupy. This is right!
  4. Once the oven is at 450 degrees, remove the pan from the oven. Carefully pour the remaining tablespoon of olive oil to the pan, ensuring that the bottom is completely coated in oil.
  5. Pour the dough into pan and return to the oven for an additional 15 minutes.

Ways To Make Socca Your Own

As previously mentioned, socca is a wonderful canvas for whatever ingredients you like. You can make this a sweet or savory dish! Here are a few fun ideas to consider trying:

  • Top with whipped cream cheese, smoked salmon, dill, red onion, and capers
  • Top with tomato sauce, cooked sausage, sauteed fennel and kale, and mozzarella cheee
  • Top with shredded Gouda and sauteed swiss chard; top with chili crisp or hot honey
  • Add cinnamon to the batter and top the cooked socca with sliced banana and Nutella

Ingredients

For the socca flatbread:

  • 1 cup chickpea flour
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 1 cup warm water
  • 2 Tbsp olive oil, divided

To assemble the flatbread:

  • 2 Tbsp store-bought garlic sauce (I picked mine up from Trader Joe's)
  • 1/2 cup cooked ground chicken, seasoned to your liking
  • 1/4 cup sauteed spinach or other greens
  • 1/4 cup sauteed cherry tomatoes
  • 6 Castelvatrano olives, halved or chopped
  • 2 Tbsp fresh dill, chopped

Instructions

For the socca flatbread:

  • Preheat oven to 450 degrees. Add a 9-10 inch cast iron skillet to the oven as it's heating up.
  • Meanwhile, prepare the socca dough. In a large mixing bowl combine chickpea flour, salt, garlic powder, and pepper. Whisk to combine.
  • Add water and 1 tablespoon olive oil, whisking to combine. The dough will be very soupy. This is right!
  • Once the oven is at 450 degrees, remove the pan from the oven. Carefully pour the remaining tablespoon of olive oil to the pan, ensuring that the bottom is completely coated in oil.
  • Pour the dough into pan and return to the oven for an additional 15 minutes.

To assemble the flatbread:

  • Once the dough is cooked through, use a spatula to loosen the socca from the pan. Invert it onto a plate.
  • Spread the garlic sauce on the socca. Top with ground chicken, spinach, tomatoes, olives, and dill. Slice and serve!
