This Gingery Carrot & Mango Smoothie is an energizing way to start your day! Packed with nutrients and plenty of flavor to match, this smoothie recipe is one you’ll make on repeat!
You know what I hate?
And yes, I’m aware that the word “hate” is rather strong.
I hate smoothies that have no flavor. Or are over sweetened. Or too watery. You too? Let’s fix that.
Meet Your New Favorite Smoothie
Another bold and strong statement. But it’s TRUE. Really, I didn’t realize how badly I was craving something refreshing, tropical, and sublimely slurppable until I made this smoothie.
Packed with the vegetables equivalents of sunshine, this smoothie is one that will simply make you smile.
The Ingredients
This incredible smoothie includes:
- Carrots: steam them until impossibly tender, then blend them right in. So. Much. Beta Carotene.
- Frozen mango and banana: frozen fruit adds rich creaminess to your smoothies. Every smoothie should include it!
- Ginger: that spicy kick you didn’t know your smoothies were missing.
- Coconut water: packed with electrolytes, this liquid addition hydrates, is low in calories, and high in potassium.
- Turmeric: the anti-inflammatory superfood spice you need in your pantry.
The Method
One critical component to a deliciously creamy smoothie is the blender you’re using. If you’re making smoothies on the regular, I would suggest getting something with no less than 700 watts to ensure you’re getting the power you need to blend a super smooth…smoothie.
This version that I use has 1,000 watts, and I use it for everything: salad dressings, salsas, sauces, nice cream….it does it all!

Gingery Carrot & Mango Smoothie
Ingredients
- 1 medium carrot, peeled and sliced in coins
- 1/2 inch piece fresh ginger, peeled and grated
- 1/2 cup frozen mango
- 1/2 banana, sliced and frozen (see note)
- 1/2 cup coconut water
- 1/4 tsp turmeric powder
Instructions
- In a small saucepan, add about 1/2 cup water. Add peeled and sliced carrot, allow to steam for 5-10 minutes util fork tender.
- Meanwhile, prepare other ingredients. Add everything to your blender, and blend until completely smooth. Adjust amount of liquid if you prefer your smoothies thinner.
- Insert straw, and enjoy!
Notes
- I always have frozen banana coins on hand for smoothies - they add a creamy texture that can't be beat.
- When a banana is about to get a little TOO ripe, I'll peel and slice it, arrange on a small cookie sheet or plate, and freeze until 75% solid. I'll then transfer them to a container for ready access!
- Feel free to add your favorite protein powder or supplement to your smoothie! I'm partial to a collagen based protein powder to get an extra boost.
