Honey Glazed Carrots with Feta and Mint
Ingredients
- 1 lb carrots, rinsed, peeled, and cut on the bias into 1 inch pieces
- 2 Tbsp honey
- 2 Tbsp white vinegar
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped or torn fresh mint
- 1/4 tsp salt
- Fresh cracked pepper
Instructions
- Add water to a medium saucepan. Set over medium-high heat until lightly boiling.
- Add carrots to water and allow to boil until fork-tender, about 10 minutes.
- In a large bowl whisk honey, vinegar, a pinch of salt, and a couple grinds of freshly cracked pepper. Add carrots, toss to combine.
- Plate carrots and top with feta and fresh mint. Sprinkle with salt and pepper and serve.
