Italian Turkey Focaccia Sandwiches
Soft and dense focaccia bread sandwiches sliced turkey, prosciutto, fresh mozzarella cheese, basil, and arugula. A sundried tomato mayonnaise and pesto glues it all together! The sandwiches are perfect for a picnic, or really anytime you’re craving an outstanding portable meal.

What Makes This Sandwich So Epic?
For starters, let’s talk about focaccia. Focaccia is a a leavened bread, typically 1/2 to 1 inch thick. Its texture is fluffy and soft, with a light chew. It’s often identified not only by its shape and thickness, but by the dimples in its crust.
If you’ve never made focaccia yourself (it’s so rewarding and even easier than you’d think!), know that it is made with a LOT of olive oil. This results in superb flavor and tenderness, which is why focaccia is a great bread to make sandwiches with.
The combination of flavors in this sandwich is simply beyond words! It’s salty, tangy, peppery, creamy, and absolutely mouthwatering.
Ingredients:
- Focaccia bread
- Pesto (store bought or homemade)
- Sun-dried Tomato Mayonnaise
- Deli turkey
- Prosciutto
- Roasted red peppers
- Fresh mozzarella cheese
- Balsamic glaze
- Fresh basil leaves
- Arugula
What To Serve With These Sandwiches
These sandwiches already have so many layers of flavor and texture, that there’s no need to overcomplicate what you serve with them! Here are a few ideas to consider:
- Lightly dressed greens (this is my go-to recipe)
- Variety of vegetables with a creamy dip
- Potato chips!
- A super summer sip, like Peach Sun Tea
- A lightly fizzy red wine, such a Lambrusco (Piazza Grande is my favorite)
- In season fresh fruit (if you’re packing a summer picnic, you can’t go wrong with watermelon and berries!)
Make This Sandwich Your New Favorite
I’ve say it so many times, and I’ll say it again! So many of my recipes are “blank canvases”.
Not a prosciutto fan? Leave it off.
Obsessed with olives? Slather on a tapenade.
Arugula not your thing? Swap in your favorite green.

Italian Turkey Focaccia Sandwiches
Ingredients
- 1 loaf focaccia bread, halved horizontally
- 2 Tbsp pesto (store bought or homemade)
- 2 Tbsp mayonnaise
- 1 Tbsp sun-dried tomatoes
- 1/2 lb sliced deli turkey
- 6 oz prosciutto
- 1/2 cup roasted red peppers
- 8 oz sliced fresh mozzarella cheese
- 2 Tbsp balsamic glaze
- 1/3 cup fresh basil leaves
- 2 cups arugula
Instructions
- Lay each half of the focaccia bread on a cutting board, cut side up.
- Combine mayonnaise and sundried tomatoes in a small food processor and pulse until combined. Spread mixture on one half of the focaccia, and the pesto on the other half.
- Layer on the remaining ingredients.
- Sandwich the two pieces of focaccia together and slice sandwich into quarters (more or less, depending on the size of your focaccia!). Wrap up if you're taking on a picnic or enjoy right away. Best enjoyed within 1 day of making.
