I don’t trust people who don’t like mashed potatoes.

There. I said it. And it’s the stone cold truth.

I mean really, who doesn’t like mashed potatoes?! They’re the perfect base to serve roasted meats, roasted veg, or…realistically, eat straight with a spoon.

And ok, FINE. I get it. Coming from a household who likes to keep things healthy and low-carb most the time (Nate is Type 1 Diabetic), I get that uber creamy, buttery, salty mashed potatoes don’t exactly top the list of healthiest things one can and should consume.

BUT. When mashed potatoes get a calorie slash but don’t sacrifice all that velvety goodness from ingredients like sour cream, cream cheese, butter, and heavy cream….

COUNT. ME. IN.

These mashers get the lightened up treatment all thanks to a few smart substitutions:

  • Greek Yogurt
  • Olive Oil
  • Fresh Garlic
  • Salt (but sparingly!)

Lightened Up Creamy Mashed Potatoes

Ingredients

  • 4 lbs Yukon Gold Potatoes
  • 1 cup Greek yogurt
  • 2 Tbsp olive oil divided
  • 2 tsp salt
  • 1 tsp Freshly cracked black pepper
  • 1 tsp Garlic Powder

Instructions

  • Wash and scrub the potatoes. Cut in to 1 inch pieces, placing them in a large stock pot. Top with water, and cook until fork tender, about 20 minutes.
  • Drain potatoes, and return to stock pot. Using a potato masher, butter cutter, or fork, mash the potatoes until very smooth. If you like your mashed potatoes to have a little more texture, feel free to mash less!
  • Mix in Greek yogurt, 1 tablespoon of olive oil, salt, pepper, and garlic powder. Mix thoroughly to combine. Adjust salt and pepper to your liking. If potatoes are too thick, increase amount of greek yogurt, or loosen them up even further with a splash of milk.
  • Transfer to a serving bowl, dragging a spoon in a circular motion on top of the potatoes (this should leave a little moat for your olive oil). Drizzle remaining tablespoon in the crevices, and top with salt and pepper.
