Native to Hawaii, this raw fish dish is mouthwateringly delicious when served in bowl form – one of my favorite ways to eat a meal! Read on to learn more about these delicious Ōra King Salmon Poké Bowls.
What Is Poké?
Poké is a traditional Hawaiian dish made of diced raw fish. It typically will be served with or marinated in a salty, savory, and sour sauce, adding additional depth and favor.
While poké is served on its own as a main dish or appetizer, it’s become more and more common in the continental United States to be served as part of a Poké Bowl. Think of these bowls almost as a deconstructed sushi role: rice serves as the base, with typical toppings like cucumber, carrot, edamame, avocado, and seaweed.
What Is Ōra King Salmon?
The simplest way to explain what Ōra King Salmon is is by comparing it to beef. In the beef world, one breed reigns supreme: Waygu. It’s known for its marbling of fat, resulting in a rich and tender cut of beef. In the salmon world, Ōra King is the “Waygu”!
Ōra King is a breed of salmon which is sustainably farmed in New Zealand. The way in which the salmon is bred, hatched, and raised is pretty remarkable. Once the fish are hatched, they’re transported to the Marlborough Sounds where they mature. It’s a fascinating process, which you can read more about on the Ōra King website!
How To Make Ōra King Salmon Poké Bowls
These Poké Bowls couldn’t be easier to make! To a bowl of rice (I opted for white rice here, but you can easily substitute brown!), add your favorite toppings that you’d find in a sushi roll. A few ideas include:
- Sliced cucumber
- Shredded carrot
- Avocado slices
- Green onion
- Edamame
- Seaweed of furikake
- Sesame seeds
Really, you can make it your own! Choose your favorite ingredients and top away.

Ōra King Salmon Poke Bowls
Ingredients
For the poke:
- 1/2 lb Ōra King Salmon, cubed
- 1 Tbsp Tamari
- 2 tsp sesame oil
- 1 tsp chili paste
To serve:
- 1 cup cooked white or sushi rice, more as needed
- Carrot, thinly sliced or shaved
- Cucumber, thinly sliced, cubed, or shaved
- Sliced avocado
- Furikake seasoning
Instructions
For the poke:
- Add cubed salmon to a medium bowl Add remaining ingredients and toss completely until salmon is coated.
To serve:
- Add rice to two bowls and top with salmon and remaining ingredients. The amounts will depend on what you like, so feel free to add more or less of what you prefer!
