This Salad's A Peach

Sweet, sweet summertime. Markets are brimming with fresh fruit and vegetables, best enjoyed as quickly after they’re picked as possible. There are so many wonderful ways to prepare all this fresh produce, but one of my favorites is in a big salad. Crisp and crunchy lettuce, tender and delicate herbs, and sun-ripened fruits and vegetables that taste impossibly fresh.

This salad features tender and juicy peaches, tangy ad creamy goat cheese, and a super simple champagne vinaigrette. This recipe is easy to toss together, making it a perfect weeknight supper side salad. Read on to learn how to make it for yourself!

How To Make This Peach and Goat Cheese Salad

With just a handful of ingredients, this recipe couldn’t be easier to make! The key, of course, is to find the freshest produce possible which will pack the most flavor in every bite.Ā 

This salad includes:

  1. Peaches!Ā Of course! They’re simply sliced and hold so much juicy sweetness, they stand up beautifully as the core ingredient.
  2. Goat Cheese! Again, how obvious! Goat cheese offers a tangy creaminess that pairs amazingly with the sweet fruit.Ā 
  3. Cruncy Lettuce! I love using something with great texture. I picked up curly green leaf lettuce: the ruffled edge provides heft in each bite.Ā 
  4. Walnuts! The creamy crunch is beautiful, keeping every mouthful interesting.Ā 
  5. Champagne Vinaigrette! Sweet, tart, and simple: this vinaigrette is one of my favorites.Ā

Making A Salad A Meal

This salad would be a lovely side dish to a big summer spread, but it also would make a beautifully fresh lunch with the addition of a few ingredients!

  1. Protein.Ā My favorite is some grilled chicken that’s been marinated in olive oil, garlic, and a splash of champagne vinegar. You could also opt for your favorite bean, quinoa, or fish to round this out as a meal.Ā 
  2. Carbs. Whether you add some sourdough croutons or a nice slice of your favorite bread, adding complex carbohydrates helps this salad sustain you for hours to come.Ā 
  3. Additional Veg. Feel free to add some additional vegetables to round out the salad. Cucumbers, onion, and green pepper would be lovely additions.Ā

Ingredients

  • 1 head green leaf lettuce, cored, washed and spun dry
  • 2 peaches, cored and thinly sliced
  • 1/2 cup crumbled goat cheese
  • 1/3 cup shelled walnut pieces

For The Champagne Vinaigrette:

  • 1/4 cup champagne vinegar
  • 2/3 cup olive oil
  • 1 Tbsp dijon mustard
  • Pinch Sea Salt
  • Freshly cracked pepper

Instructions

  • Tear lettuce into large pieces, minding the curly ends, keeping as many intact for presentation. Arrange lettuce on four plates.
  • Slice and core your peaches, slicing them into thin wedges. Divide evenly amongst plates. Sprinkle goat cheese and walnuts evenly as well.

For The Champagne Vinaigrette:

  • Add all ingredients to a small glass jar with a lid. Shake thoroughly to combine.
  • To serve, drizzle vinaigrette over each salad, or alternatively serve it with the salads so guests can spoon their own. Note that you'll likely have leftover vinagrette!
