A recipe for Perfect Grilled Sirloin Steak! Simply seasoned and perfectly grilled: these steaks are the epitome of summertime cooking. 

Top Sirloin = Top Notch

Of all the cuts of beef, top sirloin has to be one of my favorites. It has just enough fat content to give great flavor, but not enough that it overtakes each bite. It’s lean, accessible, and generally economical. It makes a classic summertime meal paired with sautéed mushrooms, roasted asparagus or grilled veggies, and a light salad.

How To Make Grilled Sirloin Steaks

In my article, How To Grill Steak: A Comprehensive Guide, I go over all the details for how to grill the perfect steak. As a hint: it couldn’t be easier! A few key considerations for grilling the best possible sirloin steaks:

  1. Season properly! I’m not a fan of spice blends or mixes when it comes to grilling steak. In my opinion, the only thing equality quality steak should need is flaky salt and freshly cracked black pepper. That’s it!
  2. Sear each side. This will help caramelize the flavors and lock in the steak’s juices. I always aim to get my grill to 500° before searing.
  3. Finish it indirect. Depending on the thickness of your steak, you’ll want to finish cooking it indirectly after it’s been seared on each side. This slows down the cooking process, allowing you better control over the final temperature.
  4. Use a thermometer! I can’t stress this enough. There’s no shame in using one to ensure you get the very best results. Be sure to take your steak off the grill when it’s within 5° of your desired cooking temperature. It will continue to increase as it rests.

Perfect Grilled Sirloin Steak

Ingredients

  • 2 lbs top sirloin steak
  • Flaky salt
  • Freshly cracked pepper

Instructions

  • Bring steak to room temperature. Season liberally with salt and pepper.
  • Heat grill to 500º. Clean the grill and oil the grates, placing the seasoned steak on the grill.
  • Sear each side for about 2 minutes, until lightly charred. Flip to the other side.
  • Cook until the desired doneness, using a meat thermometer to determine internal temperature. Remove steak when it comes within 5º of your final desired internal temperature, placing on a plate or baking sheet, loosely tenting with foil.
