What Are Potato Pancakes?

A number of different countries have their own version of potato pancakes and have their own way of making them. Depending on its origin, the recipe may include any of the following:

  • Potato
  • Onion
  • Egg
  • Flour
  • Salt and pepper
  • Nutmeg
  • Matzo Meal 
  • Buttermilk

How To Make Potato Pancakes

These tasty little bites require just a handful of simple ingredients. But when they come together, it’s absolute magic! Here’s what you need to do:

  1. The potatoes are shredded on a box grater, and squeezed to remove any residual liquid. You’ll actually be surprised how much liquid will come out of your potatoes, so don’t skip this step! If you do, you’ll end up with soggy potato pancakes. That’s no good!
  2. The shredded potatoes are combined with shredded onion, salt, and eggs, which help them bind together.
  3. This mixture is formed into small pancakes, which are lightly fried in oil. Think of fancier individual hash brown patties!

What To Serve With Potato Pancakes

These are delicious served on their own, they are particularly delicious served with sour cream and applesauce. This serving method is traditional to Eastern Europe, although it’s become very common elsewhere.

Potato Pancakes

Ingredients

  • 1 large russet potato
  • 1/2 yellow onion
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked pepper
  • Vegetable oil, for frying

Instructions

  • Scrub and dry your potato. Using the large holes of a box grater, grate the potato over a piece of cheesecloth. Squeeze liquid from the grated potato, and add to a medium bowl.
  • Grate the onion and add to the potatoes.
  • Add egg, salt, and, pepper, and stir completely to combine.
  • Add oil to a saute pan set over medium heat. You'll want enough so these truly fry and don't just saute: be sure that there is about 1/4 inch worth of oil in your pan.
  • Form spoonfuls of the batter in your hand, patting the mixture to form 2-2/12 inch wide pancakes. Add directly to the hot oil.
  • Fry on both sides until golden brown, about 3 minutes per side.
  • Serve warm with sour cream and apple sauce for serving.
