How To Make Thanksgiving Turnovers
- Preheat oven to 350 degrees.
- Butter the bottom of an 8 x 8 baking dish. Working in layers, add the bread, leftover stuffing, bacon, and shredded cheese to the pan. Be sure to reserve a little bit of the bacon and cheese to top the dish (or just add more!).
- Combine the eggs, milk, and Herbs de Provence. Whisk to combine. Pour over bread mixture carefully.
- Cover dish with foil and bake for 20 minutes. Remove the foil and continue baking for another 20 minutes, until the dish is set.
- Allow to slightly cool, top with fresh chopped herbs, and enjoy!

Perhaps your family devours your homemade stuffing. Or aren’t the biggest fan of mashed potatoes. Whatever savory leftovers you find yourself with, they’ll be perfect in these leftovers!
I like how the cranberry sauce and sweet potatoes offer a saucy component. If you finsd yourself without either of these leftovers, I would suggest adding a little bit of a berry jam (if you like the idea of adding sweetness), or bump up the amount of cheese you use. You’ll want to opt for a creamier cheese that melts well. Consider using brie, gruyère, fresh mozzarella, or talleggio.

Quick and Easy Thanksgiving Turnovers
Ingredients
- 2 sheets puff pastry, thawed
- 1 cup leftover sweet potatoes
- 1 1/2 cups leftover stuffing
- 1 1/2 cups leftover turkey, chopped
- 3/4 cup cranberry sauce
- 1 1/2 cups shredded Havarti cheese, or other creamy and melty cheese
- 1 egg, whisked
- 1 Tbsp everything bagel seasoning
Instructions
- Preheat oven to 350 degrees.
- Place one sheet of phyllo on a sheet of parchment paper on a cutting board. Use a pastry cutter or pizza wheel to slice the phyllo into 9 squares.
- Working with one piece of phyllo at a time, use a rolling pin to gently roll it out. Layer the sweet potatoes, stuffing, turkey, and cranberry sauce (in very small amounts!) on to the phyllo. Top with shredded cheese.
- Using a pastry brush, brush the edges of the phyllo square with egg wash. Fold the phyllo over the filling, forming a triangle. Gently press the edges and use a fork to seal them. Place on a parchment lined baking sheet.
- Brush each turnover with egg wash and sprinkle with everything bagel seasoning. Bake for 20 minutes or until golden brown. Serve warm!
