It’s fair season, everyone.
That’s right! Step right up! It’s about to get good.
Who’s heard of the Minnesota State Fair? errrm everyone, right? Good grief I hope so. There’s only a handful of states that rival the one and only fair in the Land of 10,000 Lakes. The place has everything.
- Fresh and buttery (like it’s literally dipped in a VAT of butter) sweet corn.
- Live music.
- Mini Donut Beer. Yes, I’m serious.
- Livestock.
- People watching (the best EVER).
- And every freaking food on a stick you can imagine.
Many of which, you wouldn’t imagine (here’s looking at you, Teriyaki Ostrich on a stick).
Which is why I’m sharing a “food on a stick” today. Today is the first of the 12 day stretch of the great Minnesota Sweat Together. And this is my ode to the state fair- summer’s final bow.

Antipasto Skewers with Pesto Dipping Sauce
Skewers make the best appetizers! You get a little bit of everything with these Antipasto Skewers with Pesto Dipping Sauce - and can hold it with one hand! Creamy mozzarella, briny olives, crunchy toasted ciabatta, ripe cherry tomatoes, and salty prosciutto make one hell of a crowd pleasing snack.
Ingredients
- Grilled Ciabatta, cubed
- cherry tomatoes
- Olives
- Bocconcini (or fresh mozzarella, ripped in to bite size pieces)
- Prosciutto
- Basil
- pesto recipe linked below
Notes
- Arrange all your ingredients, so everything is readily available. No concrete amounts of each ingredient. I just keep skewering until the first thing runs out (normally the bread).
- Assemble all ingredients on wooden skewers, arranging them on a platter.
- Serve Skewers with Homemade Pesto, or your favorite store bought version (though making it yourself is 10x tastier, and I swear: it's easy!).
