This Lightened Up Broccoli Salad is a classic potluck staple. It gets a healthy makeover, but still with the same addictive smoky, sweet, and tart crunch from broccoli, raisins, bacon, and a greek yogurt creamy dressing.
Labor Day Weekend is almost here! What are your plans?
I would put money on the fact that part of your weekend will involve some form of cookout, BBQ, picnic, or gathering of family and friends. Something about 3 day weekends make people want to PARTY. Myself obviously included.
Broccoli Salad is a nonnegotiable staple at aforementioned cookout/BBQ/picnic/gatherings. It’s always seems to be the one thing that people are drawn to, and the first thing that someone comments on, “Man, who brought the broccoli salad? Should made a double batch!”
The only drawback of this salad, like most salads of its kind, is they’re overdressed with full blown MAYO. Before you lose your mind – don’t worry. I’m a purist when it comes to the creamy, mayo-y pasta salads and such. But I also don’t need to add ~110 calories JUST FROM DRESSING, thank you very much! I’d rather save that…you know, for seconds of everything.
That said, my version of this staple gets lightened up with a creamy greek yogurt based dressing.
Chilllll, there’s still a little mayo in it. Because you gotta have some flavor. And while I love greek yogurt, sometimes nothing will 100% stand in for the flavor that mayo provides.
Woooooo! Doesn’t this look delicious?!
I know you’re already adding the ingredients for this to your LDW grocery shopping list.
I’ll make it easy for ya:
- 2 heads broccoli
- Red onion
- Bacon
- Raisins
- Greek yogurt
- Mayo
- Apple cider vinegar
I bet you have a few of the above already I your pantry and fridge!
Done & done.
Whatever type of gathering you’ll be at (even if it’s just you + 1 at home!), everyone will be SO THRILLED that you brought this. I promise. I really, really do.
Super easy to prep, and can be made well in advance (recommended!). Enjoy!
