From a food perspective, summer can be defined by all things rhubarb. Lucky for me, I don’t have to feverishly search for this tart celery-like plant. I have plenty of family and friends that grow this right in their backyard – which makes this seasonal produce even more sought after this time of year.
I have been concocting all sorts of rhubarb-centered recipes for the better part of a month.
Having this love for rhubarb (and en equal love of #THIRSTday), this Spiked Rhubarb Soda made perfect sense.
ESPECIALLY when I found RHUBARB SODA YOU GUYS. I about lost my damn mind. THIS CHANGED EVERYTHING.
Well, not really everything….I just wanted to over-dramatize things so you get mah point.
Dry Sparkling has the most unreal soda flavors. When I found this rhubarb option at Target, I snatched up every last bottle (which seems to be dwindling quickly).

Rhubarb transforms in to a gorgeous simple syrup (ah….my love of flavored simple syrups rears it’s lovely head, yet again). I switched things up this time, using honey instead of sugar! And not just any honey ….. LEMON HONEY. Thank you, Beekman Boys! ♥
Beyond that, vodka, rhubarb soda (!!!!), and a little lemon to brighten things up.

Spiked Rhubarb Soda
Ingredients
For the Spiked Rhubarb Soda:
- 1 1/2 oz vodka
- 1 1/2 oz Rhubarb simple syrup recipe below
- 3 oz rhubarb soda
For the rhubarb simple syrup:
- 1 cup lemon honey
- 1 cup water
- 3 cups (about 4 stalks) rhubarb, chopped
Instructions
For the Spiked Rhubarb Soda:
- In an ice filled cocktail shaker, add vodka and rhubarb simple syrup.
- Shake until chillllllled.
- Pour in to an ice filled low ball glass. Top with rhubarb soda, garnish with lemon.
For the rhubarb simple syrup:
- In a saucepan, combine honey and water. Bring to a simmer, swirling pan to dissolve honey,
- Once dissolved, remove from heat and add rhubarb.
- Allow rhubarb to steep for at least 20 minutes while simple syrup cools.
- Once completely cool, strain rhubarb from simple syrup and store in a glass jar in the refrigerator until ready to use!

Good question, Allie! I would try strawberries, raspberries, or cranberries (if you can find them this time of year!). Not exact replicas, but they would still be amazing in this drink. Also, check out a few different grocers in your area. Co-ops will likely carry it, but again – depends on what grows in your region!
