How To Make The Best Brussels Sprouts

Brussels sprouts are an excellent case study in how a cooking method can destroy an ingredient’s reputation. Mushy and vegetal boiled Brussels sprouts were long loathed for obvious reasons. Over the years, luckily, the masses discovered roasting, which unlocks the cruciferous vegetable’s tender nuttiness. The key, of course, is the cooking method.

Here’s what you need to make the best Brussels sprouts:

  • Brussels sprouts, stems sliced off and outer leaves removed
  • Olive oil
  • Salt 
  • Pepper

The Method

  1. Slice the root end of each Brussels sprout off, and remove the outer leaves.
  2. If you have particularly large Brussels sprouts, consider halving them. 
  3. Preheat oven to 425. Place Brussels sprouts on a parchment lined baking sheet.
  4. Drizzle with olive oil, and sprinkle with salt and pepper. 
  5. Place in preheated oven and bake for 15 minutes it until lightly golden brown and tender when pierced with a fork.

How To Make Bacon Breadcrumbs

These smoky and salty breadcrumbs might become your new favorite roasted vegetable topper! They’re so simple to make and add delicious crunchy texture and meaty flavor. 

  1. Slice 4 pieces of bacon and place in a sauté pan set over medium heat. 
  2. Cook until fat renders and bacon begins to crisp up slightly.
  3. Add breadcrumbs, rosemary, and thyme. 
  4. Cook until breadcrumbs and bacon are combined and and breadcrumbs are lightly crisped.

Ingredients

  • 1 lb brussels sprouts, trimmed and halved if large
  • 1 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp fresh cracked black pepper
  • 1/2 cup breadcrumbs
  • 3 slices cooked bacon, chopped
  • 1 tsp fresh rosemary chopped
  • 1 tsp fresh thyme, chopped

Instructions

  • Preheat oven to 425 degrees.
  • Line a baking sheet with parchment paper. Add prepped brussels sprouts to pan.
  • Drizzle with olive oil and sprinkle with salt and pepper. Use your hands to combine.
  • Roast for 20 minutes or until tender when pierced with a fork.
  • Meanwhile, prepare the bacon breadcrumbs.
  • Add precooked and chopped bacon to a medium saute pan until fat begins to render. Add breadcrumbs and stir, coating the crumbs. Add fresh chopped herbs and some cracked pepper to your liking.
  • Once the brussels sprouts have cooked, add a few spoonfuls of the bacon breadcrumbs to the bottom of your serving dish. Top with Brussels sprouts and remaining breadcrumbs. Serve warm!
