See what I did there? I know, I know. I really am clever.
Holy simple recipe, you guys. I’ve had these soba noodles in my pantry for what seems like an eternity – just waiting for the right recipe to use them. I love soba noodles, but for some reason, I always think there needs to be some intense and extravagant meal including 27 ingredients, which I rarely have enough time for.
AND THEN THIS HAPPENED.


Sesame Soba Noodles. What the heck. Seriously the EASIEST freaking recipe.


Soba noodles tend to have more of a “bite” than their traditional semolina-made cousins (the type of pasta you generally find in your grocery aisles). By “bite” I mean that they’re sightly chewier….which happens to be incredibly satisfying. This is because they’re made from buckwheat flour. They have a slightly nutty taste, which stands out in a dish like this with such simple flavors.




And oh, did I mention that soba noodles have fewer calories, more fiber, AND more protein than the aforementioned traditional pasta?! Read: it won’t spike your blood sugar.

Wonderful on its own as a light lunch, or as a side to some grilled salmon, this is a healthy and light noodle salad that I hope you’ll enjoy.

Sesame Soba Noodles
Ingredients
- 12 oz soba noodles
- 2 Tbsp Aminos (or other soy alternative)
- 1 Tbsp fresh ginger, peeled and grated
- 2 tsp sesame oil
- 1 Tbsp rice vinegar
- 1 cup Cucumber, thinly sliced
- 4 green onions,
- Sesame seeds,
Instructions
- Cook soba noodles according to package instructions.
- Meanwhile, combing aminos, ginger, sesame oil, and rice vinegar in a mason jar. Screw on lid, and shake dressing to combine.
- Add slightly cooled noddles, dressing, sliced cucumber, and chopped green onion in a medium bowl, tossing to combine.
- Garnish with sesame seeds and additional green onions.
