Smoky Balsamic Onion Jam
Ingredients
- 2 Tbsp olive oil
- 1 Tbsp unsalted butter
- 1 1/2 lbs yellow onions
- 1 tsp sugar
- 1/2 tsp smoked sea salt
- 3 Tbsp balsamic vinegar
- Dash Liquid smoke, optional
Instructions
- Heat a medium pot (preferably cast iron) over medium heat. Add olive oil and butter.
- Slice onions into 1/4 inch strips. Add to pan. Sprinkle sugar and smoked sea salt and toss thoroughly to combine.
- Stir sporadically for the next 45-60 minutes. Onions will slowly start to brown, which means they're caramelizing. This is what you want!
- Once onions are a deep golden brown hue, remove from heat. Add balsamic vinegar and stir to combine. If you'd like added smokiness, feel free to add in a dash of liquid smoke.
- Allow to completely cool before transferring to a glass jar to store in your refrigerator. Jam should keep for up to 2 weeks.
