  • You’ve requested from your mom, great uncle, or grandma about 157 times, because you continue to misplace the recipe card.

Growing up, this side dish graced our table for special occasions. Sunday suppers, Easter brunches, or weekend cookouts with family and friends. Every time it showed up on the menu, I repeatedly had seconds (or thirds), resulting in my unconscious love for this delightful veggie salad. I never knew how much  I “missed” it until the next time it was part of the mealtime lineup.
Now, fast forward approximately 10 years and imagine stumbling across this recipe, which hasn’t been made in my kitchen for that time period.
YEAH. Let’s just say this salad has been the only thing I’ve been making for the better part of two weeks.

And the best part?! It couldn’t get any easier to make:
  • Blanch snow peas + asparagus (it’s way easier than it sounds I SWEAR)
  • Chop a pepper
  • Dump everything in a bowl
  • Whisk up a simple vinaigrette
  • Toss ‘erythang together
  • Restrain yourself from eating the entire bowl

AND JUST LIKE THAT…you have a new favorite veg side to serve all summer long.
Although this combination of asparagus, snow peas, red bell pepper, and mushrooms tend to be my favorite, feel free to swap in your favorite fresh ingredients! The vinaigrette  is incredibly light and does a wonderful job marinating the raw veg.

Ingredients

  • 1/2 lb fresh snow pea pods
  • 1 lb asparagus, trimmed, cut in to 1/2 inch pieces
  • 1 red bell pepper, thinly sliced on a mandolin
  • 8 oz fresh mushrooms, sliced
  • 2 Tbsp white sesame seeds

For the dressing:

  • 1/3 cup grapeseed, canola, or vegetable oil
  • 2 Tbsp white wine vinegar
  • 1 Tbsp lemon juice
  • 1 clove garlic minced
  • 1/2 tsp salt
  • Sprinkle sugar

Instructions

  • Bring a large pot of water to a simmer. Add salt to season.
  • Add fresh snap peas, cooking for just 1 minute, and immediately transferring to a bowl of ice water.
  • Add trimmed asparagus, and cooke for 3 minutes. Transfer to same bowl of ice water to chill. Strain water, set aside.
  • In the bottom of a large bowl, combine all ingredients for the dressing, whisking to combine. Add red bell pepper, mushrooms, along with snow peas and asparagus. Toss to combine.
  • Sprinkle with sesame seeds, and allow to chill before serving.
