Who doesn’t love a good food holiday? Sure, we may wonder where from or how most food holidays have come to be, but at the end of the day: do we really need a reason to enjoy a a burger? Or Ice cream? Or a lovely picnic?

The answer is no.

But why the heck not make some fun out of it!? I suggest kicking off the celebration of all food holidays this sunny season with these Spanish Turkey Burgers with Roasted Red Pepper Sauce.

What’s In A Spanish Burger?

While I love a classic burger just like the next person, I enjoy taking my burger game to the next level by adding all sorts of herbs, cheeses, and spices to make each burger unique.

These burgers get their Spanish flair from:

  • Chopped salty green olives
  • Mellow shallots
  • Sultry smoked paprika
  • A roasted red pepper sauce that is positively drinkable

These classic Spanish ingredients meld together perfectly in these scrumptious burgers, meaning every single bite is packed with flavor.

What To Serve With These Spanish Burgers

I like serving these burgers with simple roasted sweet potato fries, similar to the ones I make here. You could also opt for more of a Spanish theme, such as:

  • Charred piquillo peppers drizzled with olive oil and topped with crushed almonds
  • A gorgeous garlicky saffron scented rice
  • Simple greens dressed with an anchovy-forward dressing

The non-negotiable here?

Ice cold rosé.

Spanish Turkey Burgers with Roasted Red Pepper Sauce

Ingredients

For the burgers:

  • 1 lb ground turkey
  • 1/3 cup green olives, chopped
  • 1 clove garlic, minced
  • 2 small shallots, minced (about 1/4 cup)
  • Dash Aminos
  • 1 tsp smoked paprika
  • 1 cup shredded pepper jack cheese
  • Brioche buns, for serving

For the Roasted Red Pepper Sauce:

  • 1 16 oz jar roasted red peppers, drained
  • 2 cloves garlic, roughly chopped
  • 1 shallot, roughly chopped
  • 1/4 cup olive oil
  • 1/4 cup basil or parsley, or mixture of both!
  • Juice of 1 lemon
  • Salt and freshly cracked black pepper

Instructions

For the burgers:

  • Add all ingredients besides pepper jack cheese and buns to a large bowl. Using your hands, mix thoroughly to combine.
  • Form mixture in to 2- 4 patties, depending on how large you'd like your burgers! Grill burgers at ~400 degrees until thoroughly cooked. The proper internal cooking temperature for ground turkey is 165 degrees. When burgers are are almost to temp, top each one with grated pepper jack cheese. Cover grill, and allow to cheese to melt, about 30 seconds. I tend to pull my burgers off the heat when they reach 155 degrees, knowing that they will continue to cook when they're resting.
  • As burgers rest, grill your buns dry on the grill, about 2 minutes. Watch carefully-you just want a nice char on them.
  • Spread bun with roasted red pepper sauce, add your cheese-topped burger, and enjoy!

For the Roasted Red Pepper Sauce:

  • Combine all ingredients including 1/4 teaspoon salt and a few grinds of freshly cracked pepper in a food processor, and blend until completely smooth.
  • Use water to thin mixture out, but remember you're wanting to use this as more of a spread - so thin carefully! Taste and adjust salt and pepper to your liking!
