Served atop of bed of greens, these Spiced Delicata Wedges are the perfect side dish for a simple weeknight meal! With just a handful of ingredients and a quick roast in the oven, this recipe will be a favorite! 

With Fall comes squash. There really is no way around it.

I’m always on the lookout for new and interesting ways to use the many varieties of squash. Whether it be mashed with brown butter, simmered in a chili, or substituted for meat in spicy curry, I like finding different ways to eat the humble vegetable.

BUT. When something is already so delicious in its purest form…why change it?

 These Spiced Delicata Wedges take the small and oblong squash and transform it in to something unfussy, simple, and delicious.

When roasting like this, I like using a variety of spices to keep things interesting. The delicate flesh of the squash is already sweet, flavorful, and creamy, so I like using flavors that won’t mask it.

  • Garlic
  • Cumin
  • Oregano
  • Salt
  • Chili Powder (just enough!)
  • Cinnamon

Spiced Delicata Wedges

Ingredients

  • 1 Delicata squash
  • 1 Tbsp olive oil
  • 1/2 tsp Garlic Powder
  • 1/4 tsp oregano , 1/4
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1/8 tsp cinnamon

Instructions

  • Preheat oven to 375 degrees. Cut off each end of the delicate squash, and slice in half. remove seeds, and slice in to 1/2 inch slices.
  • In a small bowl, combine garlic powder, oregano, chili powder, cumin, salt, and cinnamon. Toss squash with olive oil and spices. Arrange on baking sheet, baking for 25 minutes, flipping once while cooking. Serve warm.
