Sweet Potato Greek Nachos
In answering the question, “What is your favorite type of food?”, the answer is pretty simple for me: Mediterranean. Unwilling to limit my favorite cuisine to one country, going this route allows me to claim Italian, Turkish, Israeli, and, of course, Greek food as my favorite (which they all are)!
These Greek Nachos feature the quintessential flavors of Greek cuisine: fresh vegetables like cucumber, pepper, and tomato, salty Kalamata olives, fresh herbs like mint and dill, and, of course: hummus, and tzatziki sauce! My modern twist uses sweet potato tortilla chips, which offer a delicate sweetness to the savory dish. Read on to learn how I make these irresistible Sweet Potato Greek Nachos!

For the tzatziki sauce:
- 1 cup Greek yogurt

- 1/4 cup fresh dill
- 2 cloves garlic, grated
- 1 Tbsp fresh lemon juice
- 1/2 tsp salt
Instructions
For the tzatziki:
- Using a box grater, grate the cucumber. Place in a fine mesh strainer and add about 1/4 teaspoon of salt over the cucumber. Set over the sink or a bowl to release some of its liquid.
