7 Layer Taco Dip

I find that everyone seems to have a Taco Dip recipe that they swear by. Or at the very least, when brought up in conversation, people realize how much they love it and how infrequently they enjoy it. That being said, let this be your reminder about Taco Dip! My recipe takes the “layered” approach, with salsa-spiked refried beans, fresh guacamole, and seasoned sour cream, serving as the delicious base. It’s then topped off with all the classic taco fixings like tomatoes, shredded cheese, cilantro black olives, green onions, and sliced jalapenos. Is this technically 7 layers? Not quite. But, I doubt anyone will complain…

Components of This Taco Dip

This Ultimate 7-Layer Taco Dip of course features…layers. Layers of delicious ingredients are scooped up with crispy tortilla chips, offering the perfect bite each time.

This dip includes the following layers:

  • Refried Beans: A humble can of refried beans is combined with salsa (grab your favorite!) to give it a little extra punch. You could easily add some extra shredded cheese if you want extra flavor here as well.
  • Guacamole: I always opt for homemade, since it’s much for delicious and economical. No need to go overboard here though: some avocado, lime juice, red onion, and garlic are all that you need since so many of the other traditional guac ingredients are incorporated into the dip.
  • Seasoned Sour Cream: Sour cream and taco seasoning are ll you need to added a slightly spicy and creamy layer. I see a lot of recipes that also include cream cheese – which would be delicious – but I prefer mine without it since the cream cheese can be somewhat “stiff” in the dip.
  • Shredded Cheese: I will always vouche for hand-shredded cheese. Get the block and shred your own – it’s so much better! The pre-shredded options often include anti-caking agents (read: extra ingredients that impact flavor and meltability).
  • Tomatoes: Slice up whatever you have. I reach for cherry tomatoes as they’re less wet when chopped into bite-sized pieces.
  • Cilantro: A must in any Mexican-inspired cuisine!
  • Black Olives: Are they traditional? No. Does this Mexican-inspired dish taste better with them? Absolutely.
  • Green Onions: You can use red onion here too, but I find the onion flavor is what really round out everything in this dish!
  • Sliced Jalapenos: The spicier the better in my opinion! Feel free to omit if that’s not your thing, or reach for pickled jalapenos which would add a nice tangy layer of flavor.

How To Make The Ultimate 7-Layer Taco Dip

Refried bean layer:

  • Combine refried beans and salsa in a medium bowl. Microwave in 20-second intervals, stirring in between. Once the beans are warm, spread the mixture on the bottom of a 9×9 glass baking dish. 

Guacamole layer:

  • Combine all ingredients in a medium bowl and mash together until combined. Spread on top of the refried beans evenly. 

Seasoned sour cream layer:

  • Combine all ingredients in a medium bowl. Spread on top of the guacamole layer. 

To assemble:

  • Layer the remaining ingredients on top of the base layers. Refrigerate at least 30 minutes until serving. Serve with your favorite tortilla chips and enjoy!

Ingredients

For the refried bean layer:

  • 15 oz can refried beans
  • 1/4 cup of your favorite salsa

For the guacamole layer:

  • 3 avocados
  • 2 Tbsp minced red onion
  • 1 clove garlic, minced
  • 1/2 lime, juiced
  • 1/4 tsp salt

For the seasoned sour cream layer:

  • 2 cups sour cream
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/4 tsp salt

For the taco fixings:

  • 1 cup cheddar cheese, shredded
  • 1 1/2 cups cherry tomatoes, sliced into bite-sized pieces
  • 1/2 cup cilantro (leaves left whole or chopped)
  • sliced black olives
  • 1/2 cup sliced green onions
  • Sliced fresh jalapenos, for garnish (optional but highly recommended

Instructions

For the refried bean layer:

  • Combine refried beans and salsa in a medium bowl. Microwave in 20-second intervals, stirring in between. Once the beans are warmed through, spread the mixture on the bottom of a 9×9 glass baking dish.

For the guacamole layer:

  • Combine all ingredients in a medium bowl and mash together until combined. Spread on top of the refried beans evenly.

For the seasoned sour cream layer:

  • Combine all ingredients in a medium bowl. Spread on top of the guacamole layer.
