Tiramisu for Two!
Few desserts make me as happy as Tiramisu does. Crumbly biscotti cookies are brushed with espresso and layered with a rum-spiked fluffy mascarpone mixture. The cookies soften as the layers meld in the refrigerator. A generous dusting of cocoa powder tops off this stunning and simple dessert!
While the traditional recipe calls for egg yolks which richens the dessert, my version omits eggs making it easier (and faster!) to put together. Read on to learn how to make this eggless Tiramisu for Two!
What Is Tiramisu?
Tiramisu is a classic Italian dessert featuring the following ingredients that are combined and layered:
- Lady Finger cookies (you can find these in most well-stocked grocery stores in the cookie aisle!)
- Espresso
- Mascarpone Cheese
- Sugar
- Eggs
- Cocoa
Different variations will feature rum or other liqueurs.
How To Make Tiramisu for Two
- Start by making the espresso mixture: add espresso powder to 1/2 cup very hot water. Stir to combine and set aside as you prepare the other ingredients.
- Add heavy cream and vanilla to a medium bowl. Use a hand mixer to whip the cream until soft peaks form.
- Add mascarpone cheese, rum, and sugar to a separate medium bowl. Use your hand mixer to combine this mixture. Fold whipped cream into the mascarpone gently. Set aside.
- Break lady finger cookies up to fit inside the glass dishes you will serve your tiramisu in. Do one layer of biscotti on the bottom of each dish. Using a pastry brush, brush each biscotti cookie with the espresso mixture.
- Top with a couple of spoonfuls of the mascarpone mixture. Continue this process: brush lady fingers with espresso, and top with mascarpone mixture until all ingredients are gone.
- Dust each tiramisu with cocoa powder. Refrigerate for at least 1 hour and up to 24 hours in advance.

- 1 Tbsp dark rum
- 2 Tbsp sugar
- 1/3 cup heavy whipping cream
- 1/2 tsp vanilla extract

- 1-2 Tbsp cocoa pwoder
