How To Make Ultimate Loaded Queso
Aside from Velveeta and Rotelle, making my own queso has never been a dish that I’ve prioritized making myself. I’ll be honest, queso isn’t something I eat very often. It’s reserved for special occasions, but even then I typically enjoy a version that someone else has made. But when I recently made it myself, I realized just how easy it is to make a personalized, scrumptious, and simple queso all on my own!
Ingredients To Make Ultimate Loaded Queso
- American Cheese
- Pepperjack Cheese
- Chorizo
- Onion
- Jalapeno
- Diced Tomatoes
- Chili Powder
- Cumin
- Half and half
- Cilantro
- Green Onions
- Red Onions
The Method
Making your own queso requires that you follow a set of instructions to ensure the creamiest queso possible:
- Sauté ground chorizo until cooked through. Remove from pan and set aside.
- Add onion and jalapeño to the pan and sauté until fragrant.
- Add shredded cheese, alternating between adding the half and half. Whisk completely until the mixture is smooth!
- Add the spices, chorizo, chipotle, and diced tomatoes to the pan and stir to combine.
Tips For The Best Ultimate Loaded Queso
I certainly don’t claim to be an expert on queso, however, I learned a few things after making it a couple times! Here are my tips to make the best Ultimate Loaded Queso:
- Shred the cheese. And no… pre-shredded does not count! For the creamiest results, you have to shred your own blocked cheese. I used two types in this recipe: American and pepperjack. You can buy them in block form, and shred away!
- Brown the chorizo first, then sauté the aromatics. This means you aren’t wasting any flavor from the chorizo! I use onion and jalapeños here, but you could add garlic or switch the type of onion you use.
- Use just enough half-and-half. My recipe calls for one cup, but use this sparingly. You still want the queso to be relatively thick, ensuring you get an amazing “scoop” in each bite.
- Serve it warm. Whether that means you keep it over a low flame on the stove top, or you transfer it to a crockpot, it’s best to serve this queso warm. It will start to seize up and thicken as it starts to cool off. This won’t impact the taste, it will just be thicker!

Ultimate Loaded Queso
Ingredients
- 1 lb ground chorizo
- 1/2 cup onion, minced
- 1-2 jalapeños, minced
- 1 lb block American cheese, shredded
- 1/2 lb block pepper jack cheese, shredded
- 1 chipotle en adobo, minced
- 3/4 tsp chili powder
- 1 tsp cumin
- 1 cup half and half
- 10 oz can diced tomatoes, drained
- Green onions, chopped red onion, chopped cherry tomatoes, cilantro, to top the queso
Instructions
- In a large skillet, sauté ground chorizo until completely cooked through. Remove chorizo from the pan and set aside.
- In the remaining grease from the chorizo, cook onion and jalapeño until fragrant, about 3 minutes.
- Start adding shredded cheese by the handful and stirring until it melts. Alternate between adding shredded cheese and half and half. When mixture starts coming together, switch to using a whisk to stir the queso until smooth.
- Add the spices ,minced chipotle en adobo, chorizo, and diced tomatoes. Stir completely to combine.
- Top with cilantro, jalapeño slices, red onion, cherry tomatoes, and green onion. Serve with tortilla chips!
