GRILLING.
Growing up, my dad grilled year round. Even if there was 2 feet of snow in the backyard, there would be a trail shoveled to the grill. Summer obviously meant easier means to get on the patio, but the food was always just as good. Garlic studded venison steaks, succulent BBQ chicken, perfectly cooked burgers, and the best grilled salmon I’ve ever had the privilege to eat. After years and years of enjoying my father’s culinary genius (and by “enjoying”, I mean devouring), I’m finding myself creating my own versions of his work.
Like this burger. It’s continued to change over the past few years, but remains a standby in my house. I’ve made a variety of different burgers using this recipe as a base, and adding or removing a few ingredients. This version is what I consider the original though.

Grilled Chicken Burgers with Sun-Dried Tomatoes, Mozzarella, and Pesto Mayo
Ingredients
- 16 oz ground chicken
- 1/2 cup yellow onion chopped
- 2 Tbsp parsley minced
- 2 cloves garlic minced
- 1/2 tsp dried oreagno
- 1/2 tsp dried basil
- 1/3 cup sun-dried tomatoes, chopped
- Salt and pepper to taste
- 4 oz fresh mozzarella cheese, sliced
- 1/4 cup mayo
- 2 Tbsp pesto
- 4 whole wheat hamburger buns, optional
Instructions
- Add all ingredients to medium bowl. Use hands to thoroughly mix together.
- Heat grill to high. Grease grill grates with oil.
- Grill chicken burgers, flipping once, for a total time of about 12 minutes (or until burgers reach 175 degrees). Add fresh mozzarella cheese to each burger for the last 3-4 minutes of grilling.
- Meanwhile, mix mayo and pesto in a small bowl. Place sliced hamburger buns on grill, until charred.
- Spread pesto mayo on each bun, top with chicken burger.
