Frittata has a wrongful reputation of being “too fancy”, or “too much work”. This couldn’t be further from the truth!

How Do You Make A Frittata?

Frittata is an Italian dish that includes a variety of ingredients, such as meat vegetables, and cheese, which are baked into eggs. The beauty of this classic dish is that you can use whichever flavor combinations you like! I like using seasonal ingredients, swapping out the vegetables I use to reflect what’s available. 

Vegetables and meat should be pre-cooked to ensure the right texture and doneness, although some may be ok to toss right in. They are then added to an ovenproof skillet along with whisked eggs. Cheese is a great addition, adding plenty of delicious flavor. 

The whole skillet is placed into the oven to bake into puffed-up perfection.

Making An Asparagus & Feta Frittata

As previously mentioned, there are some vegetables that should be pre-cooked in order to ensure that they’re fully tender in the final product. Thinner vegetables, such as asparagus, can be left uncooked, as they will tenderize plenty during the baking process. You can choose to sauté in advance if you prefer, though!

I like using both whole eggs and egg whites to encourage a lighter end result. I find that egg whites provide a more fluffy texture, as opposed to just whole eggs, which will be a little denser with the fat added from the egg yolks. 

The eggs are whisked until bubbles form, and then are added to an ovenproof skillet (I prefer cast iron), along with the other ingredients. It’s then cooked for about 30 minutes or until the eggs are set.

Asparagus and Feta Frittata

Ingredients

  • 6 egg whites
  • 4 eggs
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried dill (fresh would be wonderful, too!)
  • 1/2 cup feta cheese
  • 1/3 lb asparagus, washed and trimmed

Instructions

  • Preheat oven to 350 degrees. Spray a pie plate with cooking oil.
  • In a large bowl combine egg whites and eggs. Add salt and pepper, and whisk completely until frothy. Pour into prepared pie plate.
  • Sprinkle feta over whisked eggs. Trim asparagus to fit in a circular shape on top of the eggs in the pie plate.
  • Bake for 30 minutes or until eggs set. Allow to cool slightly before slicing!
