Bacon and Swiss Quiche
This is it, friends. The only quiche recipe you will ever need! Is it packed with complicated ingredients that require chopping and prepping? No. Is it undeniably everyone’s favorite quiche after they try it? Yes!
This recipe hails from a family friend, Marsha. Many recipes that my family holds hear and dear came from Marsha, who as you could guess is a fabulous cook (along with her husband, Grant!). This quiche, referred to as “Swiss Pie” in my family, is everyone’s favorite special occasion brunch recipe. Once you read about it, I’m sure you’ll see why!
How To Make Bacon and Swiss Quiche
Before we go any further, I have to tell you a secret about this recipe: it only includes two eggs. Remember me saying that my family calls it “Swiss Pie”? Thats because this recipe is mainly cheese. How bad can that be though, right?
Making this mouthwatering brunch recipe takes a few steps:
- Make the crust. The crust for this quiche is just saltine crackers and butter. The mixture is pressed into a pie plate followed by
- Cook the bacon. The recipe calls for 6 slices of cooked bacon. While the original recipe calls for the bacon to be made in a saute pan (later using the grease to saute the onions), I like baking mine in the oven.
- Saute the onions. Since I bake my bacon, I add a little olive oil to a saute pan and cook until the onions are translucent.
- Shred the cheese. Shredding your own cheese is always a non-negotiable in my book. Swiss cheese offers sweet nuttiness, while a small amount of cheddar cheese offers tang.
Ways To Make This Quiche Your Own
The beauty of quiche is that it’s completely customizable. With this recipe, you can substitute any cheese for the Swiss and cheddar, although I do encourage you to try it as is before altering it (it really is just too good!).
Additionally, you can add whatever vegetables you like. Here are a few flavor combinations you could consider:
- 8 oz shredded mozzarella, 1/2 cup feta cheese, cherry tomatoes, and dill
- 8 oz shredded colby jack cheese, 1/2 cup sharp cheddar, ground sausage, sauteed onion and green peppers
- 8 oz shredded pepperjack, 1/2 cup cotija, fresh corn, jalapeno, and cilantro
What To Serve With Bacon and Swiss Quiche
- Fresh fruit
- A light salad like my Summer Salad with Blackberries, Pistachios, and Dill
- Something sweet like my Mom’s Rhubarb Muffins or Super Tender Almond Poppyseed Muffins
- Something bubbly like Prosecco or my Pomegranate Mimosa

Ingredients
For the crust:
- 1 cup crushed saltine crackers (26 crackers)
- 1/4 cup butter, melted
For the quiche:
- 6 slices cooked bacon, chopped
- 1 yellow onion, chopped and sauteed
- 2 eggs, lightly whisked
- 3/4 cup sour cream
- 8 oz block Swiss cheese, grated
- 1/2 cup shredded cheddar cheese
Instructions
For the crust:
- Add crackers to a zip-top plastic bag. Use a rolling pin to crush crackers. Add to 9-inch pie plate.
- Drizzle melted butter and toss to combine. Use the bottom of a glass or measuring cup to press the mixture into the pie plate and up the sides, forming a crust. Set aside.
For the quiche:
- Preheat oven to 375 degrees.
- In a large bowl combine the remaining ingredients. Mix completely to combine.
- Pour mixture into the pie plate, and bake for 25 minutes.
- Allow to sit for 10 minutes before cutting and serving. Garnish with chives.
