A list of quintessential German dishes wouldn’t be complete without bratwurst . Though the familiar American way of enjoying them is delicious, often between a bun and topped with sauerkraut, relish, ketchup and mustard, there are so many other delicious ways to prepare the classic German sausage. This preparation reminds me of being a child. My Dad loved cooking recipes like this during the Fall, when hearty meals were at the center of our dinner table. His rendition typically included sauerkraut, the sour and fermented funk adding delicious flavor. However, I wanted this dish to be a little more sweet, highlighting the crisp apples that in season right now.
What's In This Dish?
This is one of those dishes that requires very little prep, but the pay off in flavor is incredible! Here’s what you’ll need:
- Bratwurst. Make sure you seek out the fresh kind if you can, which will deliver the most flavor.
- Apples. Choose whatever variety you like best, I happened to to have Honeycrisp in my drawer, so that’s what I used!
- Onions. The combination of apple and onion is classic, particularly when you seek out the sweet yellow varietals, which compliments the sweetness in the fruit.
- Beer. Would it even be a bratwursts recipe without including beer as well?! Didn’t think so. Grab your favorite hearty beer. Oktoberfest would obviously be an excellent option!
How To Make Bratwurst with Apples
As mentioned, the preparation for this dish is super simple, including just a few steps before it’s popped into the oven to cook until fragrant and tender. Here’s what you need to do:
- Brown your bratwurst. Add a little oil to a cast-iron Dutch oven, and sear the sides of each of your bratwurst. They’ll be done when they easily lift from the pan and are golden brown.
- Add and sliced onions and apples.
- Top with seasoning. Salt and pepper add basic flair, but caraway provides an added layer of flavor.
- Pour in the beer! Adding one cup allows for your ingredients to start to steam, while simultaneously adding delicious flavor. Feel free to pour what’s left in a beer stein for yourself…
- Roast. Add the cover, and roast in a 375° oven for about 30 minutes. The apples and onions should be soft and tender, and the bratwurst should be completely cooked through.

Bratwurst with Apples
Ingredients
- 2 Tbsp olive oil
- 4 fresh bratwurst
- 2 apples, peeled and thinly sliced
- 1 large sweet onion, sliced
- 1 Tbsp apple cider vinegar
- 1 cup dark beer, such as Oktoberfest
- 1 tsp caraway seeds
- 1/4 tsp freshly cracked pepper
Instructions
- Preheat oven to 400º.
- Add olive oil to a medium dutch oven set over medium heat. Add bratwurst and brown until golden on all sides.
- Meanwhile, peel and slice the apple and the onion. Add to the pan of browned bratwurst.
- Pour in applecider vinegar and beer and add caraway seeds and pepper. Stir to combine.
- Roast for 30 minutes until apples and onions are soft and bratwurst are cooked through.
