I’m not a big “biscuit” person.

It’s not that I don’t love them – they’re delicious, of course! I’ve just never been one to grab for a biscuit when other delicious breakfast carbs are available to me.

Servings: 12 biscuits

Ingredients

  • 1 Tbsp butter
  • i cup Bartlett pear, diced
  • 1 Tbsp chopped fresh sage
  • 1 Tbsp brown sugar
  • 1 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 5 Tbsp chilled butter, cut in to small pieces
  • 3/4 cup buttermilk
  • 2 tsp orange zest
  • Cooking Spray

Instructions

  • Preheat oven to 450 degrees.
  • Melt butter in nonstick skillet over medium heat. Sauté pear and sage in butter for about 8 minutes, or until pear is tender. Add brown sugar, and continue to sauté until sugar melts. Remove from heat.
  • Lightly spoon flour in to measuring cup, leveling off with a knife. Combine flour, baking powder, and salt in a large bowl; cut in butter with pastry blender or two knives until mixture resembles coarse meal.
  • Combine buttermilk and orange zest in a small bowl. Add to flour mixture, stirring until just combined. Fold in pears.
  • Coat muffin tin with cooking spray. Drop dough in to prepared muffin tin. Bake at 450 for 13 minutes, or until biscuits are browned.
