I’m always looking for fun new ways to use seasonal produce, especially when the season is so short! Summer’s ruby jewels pair perfectly with chewy farro, creamy and herby cheese, bright herbs, and delicate pine nuts. It’s all tossed in a tangy balsamic vinaigrette and sprinkled with more fresh herbs. This dish is packed with a variety of textures and flavors – it’s absolutely delicious!
How To Make Goat Cheese and Tart Cherry Farro Salad
This salad is so simple to make, only requiring a handful of simple ingredients. Here’s what you need:
- Cooked Farro
- Fresh Cherries
- Fresh Mint
- Fresh Parsley
- Fresh Dill
- Goat Cheese
- Pinenuts
- Balsamic Vinaigrette
All these ingredients are combined and tossed in a tangy balsamic vinaigrette. The end result is a side salad that is packed with amazing texture and flavor!
What To Serve With Goat Cheese and Tart Cherry Farro Salad
You can round out this tasty side salad as a main dish with the addition of a few things:

Goat Cheese and Tart Cherry Farro Salad
Ingredients
- 2 cups cooked farro
- 1 cup fresh cherries, destemmed, pitted, and chopped
- 1/2 cup goat cheese, crumbled
- 1/4 cup chopped parsley
- 1/4 cup fresh mint, chopped
- 1/2 cup pine nuts
For the vinaigrette:
- 2 Tbsp red wine vinegar
- 1 tsp dijon mustard
- 1/4 cup olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Combine all ingredients for the salad in a large bowl.
- Combine vinaigrette ingredients in a small jar, shaking to combine.
- Drizzle dressing over salad, and toss completely to combine. Garnish with additional fresh herbs and serve.
