What Is Braising?
Braising is a simple and popular technique in the kitchen, and for good reason. Compared to roasting, braising simply means cooking in liquid. When referring to braising meat, this means that the meat is cooked in a liquid like stock, wine, or cider until it’s tender and falls apart. A number of other ingredients may be used to increase flavor and interest. Braising can be done on the stove top, in the oven, or in the slow cooker!
How To Make Cider Braided Pork Roast
Last week I shared an article titled, “Roasting Meat: A How To Guide” in which I cover the importance of searing your meat before slowly cooking it. This locks in flavor, resulting in a much more flavorful dish. With braising, you don’t want to skip this step either!
Ingredients For Cider Braised Pork Roast
To make this scrumptious dish, you’ll need:
- Pork Shoulder Roast
- Salt and Pepper
- Olive Oil
- An Onion
- Garlic
- Apple Cider
- Chicken Stock
- Honeycrisp Apples
- Rosemary and Thyme
Tools To Make Cider Braised Pork Roast
Steps To Make Cider Braised Pork Roast
- Season pork roast with salt and pepper.
- In a large Dutch oven set over medium heat, sear the seasoned pork roast on all sides. Remove roast from pan, and set aside.
- Add sliced onion and minced garlic to the pan, sautéing until fragrant. Turn the heat off and return the roast to the pan.
- Poured 2 cups each of apple cider and chicken stock to the pan.
- Slice the apples and tuck slices around the pork roast.
- Cover the pan and transfer to a 325° oven for 2 1/2 hours, or until the roast is falling apart.
What To Serve With Cider Braised Pork Roast
To round out the meal, I like serving this tender and mouthwatering pork with the following items:
- Wine. A Pinot Noir would be excellent with this dish!
- Mashed Potatoes. These are my absolute favorite!
- Roasted or steamed green beans
- Sliced of toasted baguette

Cider Braised Pork Roast with Apples
Ingredients
- 3 lb pork shoulder roast
- 2 tsp salt
- 1 tsp freshly cracked pepper
- 1 Tbsp olive oil
- 1 medium onion, peeled and sliced
- 4 cloves garlic, minced
- 2 cups apple cider
- 2 cups chicken stock
- 2 Honeycrisp apples, thinly sliced
- 1 sprig fresh rosemary
- 4 sprigs fresh thyme
Instructions
- Season the pork roast with salt and pepper.
- In a large Dutch oven set over medium heat, sear the seasoned pork roast on all sides. Remove roast from pan, and set aside.
- Add sliced onion and minced garlic to the pan, sautéing until fragrant. Turn the heat off and return the roast to the pan.
- Pour 2 cups each of apple cider and chicken stock to the pan. Slice the apples and tuck slices around the pork roast. Add rosemary and 3 sprigs of thyme.
- Cover the pan and transfer to a 325° oven for 2 1/2 hours, or until the roast is falling apart.
- Serve the roast garnished with fresh thyme and served with the apples and onions.
