What Is Brining?
To brine something is to soak it in a solution that tenderizes for a period of time. The brining solution can be comprised of water, beer, wine, apple juice, or a salt water solution. Many brining liquids also include various spices like garlic, citrus, peppercorns, dried herbs, and spices. Brining is typically used in proteins, but can also be used for vegetables (think about pickles!).
Brining is such an easy step that delivers incredibly delicious results consistently. Even in just one hour, brining will yield the most incredibly juicy meat you’ve ever tried!
How To Make Dill Pickle Brined Grilled Chicken
- Place chicken in a large bowl and cover with pickle brine. Cover the bowl with plastic wrap and refrigerate at least 1 hour.
- Remove chicken from the brine and place on paper towel-lined baking sheet. Blot each piece with paper towels, removing as much moisture as possible.
- Combine spices in a small bowl. Drizzle olive oil over chicken, massaging in to ensure each piece is lightly coated.
- Sprinkle spices over each piece of chicken, again using your fingers to ensure each piece is coated.
- Preheat the grill to 375 degrees.
- Place chicken on the grates and cook, turning every so often, until chicken registers at 165 degrees and is lightly charred on the exterior.
- Remove from grill and allow to sit for at least 10 minutes before serving.

- 2 Tbsp olive oil
- 1 Tbsp salt
- 1 1/2 Tbsp dried dill
- 2 tsp garlic powder
- 1-2 tsp freshly cracked black pepper
