A Spicy One-Pan Breakfast

Any dish including a homemade tomato sauce is a winner in my book. And realistically, any other ingredients in said dish are simply a conduit to get the tomato sauce into my mouth. 

However, in this dish, there’s another ingredient that may not be so obvious that’s hiding beneath that blanket of zippy and bright tomato sauce: EGGS.

What Is Eggs In Purgatory?

The rather morbid recipe title traces back to southern Italy, where it’s called Uova in Purgatario. This dish has  North African and Andalusian cousins, titled Shakshouka and Huevos a la Flamenca respectively. Each region has its own take on the recipe, but all include eggs that are baked in a tomato sauce.

How To Make Eggs In Purgatory

As with any tomato-based Italian dish, this recipe includes lots of garlic. Let’s take a closer look at what ingredients make up this delicious Italian breakfast:

  1. Onion & Garlic: A staple in Italian cooking, this recipe starts off by sauteeing minced onion and garlic which creates a flavorful base.
  2. Crushed Tomatoes: A favorite of mine when making any homemade tomato sauce, crushed tomatoes still have plenty of texture which I love. 
  3. Tomato Paste: Adding richness to dishes, tomato paste adds extra tomato-oomph that can only e replicated with hours of low and slow cooking. 
  4. Cherry Tomatoes:Adding a layer of freshness, I love using fresh cherry tomatoes to add additional texture and flavor.
  5. Eggs: Eggs are gently cooked in the simmering tomato sauce. The yolks are left runny, which adds lusciousness.
  6. Toasted Baguette: Crunchy, crispy, and perfect for scooping the rich tomato sauce and egg mixture.
  7. Red Pepper Flakes: A must! Add to your desired spice level.

Eggs In Purgatory

Equipment

  • Cast Iron Skillet

Ingredients

  • 1 Tbsp olive oil
  • 4 cloves garlic, finely minced
  • 1/4 cup yellow onion, finely minced
  • 1 Tbsp tomato paste
  • 28 oz can crushed tomatoes
  • 1 Tbsp red pepper flakes, divided
  • 1 cup cherry tomatoes
  • 4 eggs
  • Sliced baguette, for serving

Instructions

  • Add olive oil to a cast iron skillet set over medium heat.
  • Add minced garlic and onion, sauteeing until fragrant, about 2 minutes.
  • Add tomato paste and stir to combine. Add crushed tomatoes, cherry tomatoes, and 2 teaspoons of red pepper flakes (more or else, based on how spicy you like things!). Allow to gently simmer for 15 minutes, stirring sporadically.
  • Crack 1 egg at a time into a small dish. Gently slide eggs into tomato sauce. Allow to continue cooking about 5 minutes, until whites are set but yolks are still runny.
  • As the eggs cook, toast baguette slices for serving.
  • Serve with warm baguette slices, additional red pepper flakes, and pepper.
