Fire up the grill! We’re making Farmer’s Market Grilled Pizza. You don’t need a fancy wood-burning oven to create a delicious and gourmet pizza. Use your favorite pizza dough some fresh-picked produce and delicious Président® Brie to make your new go-to grilled supper!

Let’s Talk About Pizza

If ever there were a universally-loved food with iterations spanning all cuisines…it would be pizza. Pizza is one of those things that people just get. All the accoutrements of a delicious meal atop a crust, maybe with some sauce thrown in (or not), and perhaps a sprinkle of something salt, spicy, or herby on top?

Where do I sign?

Yes, pizza is well-loved. There are Italian versions (the OG), American, Korean, Mexican, Spanish, French, Taiwanese….just to name a few cuisines that are top of mind based off of my pizza experience. Just as there are so many options of what you can put ON a pizza, there are also a few ways you can MAKE your pizza. My favorite? Grilling it.

How To Grill Pizza

Grilling pizza is such a fun way to bring some fun to the grill. Sure, burgers, brats, chicken, ribs: they’re all great on the grill, and surely a summer staple. However,  I’ve been grilling pizza for years, and it’s always something I look forward to.

Step 1: Find the Right Dough

I’m not here to tell you that you HAVE TO make your own pizza dough. Ease, convenience, and discomfort with dough-making are all fine excuses if you want to grab a pre-made dough from the grocery store. What I AM here to do is encourage you, challenge you, and make you a believer in the fact that:

  1. Pizza dough is not difficult to make.
  2. Trying new things in the kitchen can be fun.
  3. Homemade pizza crust truly cannot be beat (especially when grilled!).

That said, the recipe that I share here is worth the extra effort that will take your pizza from ‘great’ to ‘OUTSTANDING’!

Step 2: Pick Your Ingredients

I’m a huge believer in using what’s in season, so I’ve highlighted the freshest summer produce in this gorgeous ‘za. The beauty of pizza, however, is that you get to choose whatever ingredients you like! Mix and match your favorites to find the perfect pie for you. I grilled some of the ingredients on this pizza in advance, knowing that once I assemble the pizza on the grill, it won’t take much time.

Step 3: Use The Best Cheese

Arguably one of the more important parts of a pizza, the cheese you use can make or break that perfect slice. This recipe features the ultimate cheese: flavorful, gooey, decadent Président Brie Cheese. Likely thought of as a decadent winter appetizer, I challenge you to shift that perspective and use it on a summery pizza! The way this brie melts in to the fresh veg is something from a dream. Every bite it buttery and addicting, yet fresh! The perfect cheese for any summer pizza.

Step 4: The Technique

First things first, you need to prep the crust. Since we’re grilling, you’re placing the pizza crust directly on to the hot grill grates (unless you have a cast iron pizza pan, in which case – use it!), as opposed to placing it on a pizza pan, with all the toppings, and cooking in a convection oven. Convection ovens use a fan to circulate the hot air around your food, meaning it will maintain a consistent heat throughout the oven.

With grilling, we’re cooking either direct or indirect: direct means we’re cooking right over the heat source, while indirect means cooking adjacent to the heat. I like placing the oiled pizza dough on the grates using indirect heat. It only needs a quick grill on one side, until the dough is firm enough to flip. You’ll then turn the dough over and add all of your prepped toppings!
