OK you guys… let’s talk about burgers! I’m a burger fan year round, but I get my proper fill in the summer, naturally.
  • Chicken burgers
  • Turkey burgers
  • Beef burgers
  • Venison burgers
  • Salmon burgers
The options are endless!

Truly though, a “burger” can be a beautiful blank canvas for a variety of flavor accoutrements. In the non-summer months, I use the same method with bowls:

  1. Start with a base: quinoa, brown rice, farro, riced cauli
  2. Add bulk:Adiced grilled chicken, ground +seasoned turkey, cubed tofu
  3. Fill in with veg: roasted roots, sautéed greens, charred potatoes, blanched broccoli, asparagus, peas, or whatever fits your fancy
  4. Top with a dollop: tzatziki, avocado, seasoned greek yogurt
  5. Add the zing: giardineria, fresh jalapeño, pickled red onion
  6. Sprinkle it on: s+p, EBTB (everything but the bagel seasoning, of course), sesame seed, quinoa

This approach translates nicely to my summer eating style.

Ahem….BURGERS…in case you missed the ENTIRE point of this article.

Now that I have your attention, let’s move on!

(Love ya still, k?)

Some of my FAVORITE flavor inspirations?

  • Italian: sun-dried tomato (chopped in to burger, mixed in to an aioli), spinach, fresh mozzarella, pesto
  • Mexican: chopped romaine, spicy guac, spicier salsa, cotija cheese, pickled red onion
  • Thai: grilled pineapple, spicy slaw, thai peanut sauce, fresh peanuts
  • Classic American, volume turned up: crisp green leaf, salt-sprinkled-juicy tomato, avocado slices, toped with ice juice, spicy cheddar
  • Or my favorite….

She’s made with ground beef (although lamb would be pretty much AMAZING here), sliced tomato, grilled green pepper, creamy tzatziki, pickled red onion, and of course, FETA.

There aren’t a lot of words that can precisely describe the elation that occurs when you take your first bite of this flavor-bombed burger. Other than…

Cook Time10 minutes
Total Time30 minutes
Course: Main Dish
Servings: 4 burgers

Ingredients

For the burgers:

  • 1 lb Ground beef
  • 1/4 cup yellow onion minced
  • 2 cloves garlic minced
  • 1 tsp fresh oregano chopped
  • 1 tsp Fresh mint, chopped
  • 1/2 tsp salt
  • Freshly cracked pepper

To Serve:

  • 1 head Boston bib lettuce, leaves removed
  • 1 Roma tomato, sliced
  • 1/2 cup feta, crumbled
  • 1 green bell pepper, sliced in to quarters
  • Tzatziki to serve (recipe linked below)
  • Pickled red onions, to serve
  • Sliced cucumber, to serve

Instructions

For the burgers:

  • Start by grilling the green pepper. Heat your grill to medium - high (375-400 degrees).Drizzle the quarters of green pepper with olive oil and season with salt and pepper, and add to grill.
  • Combine all ingredients for burgers in a large bowl. Using your hands, mix thoroughly to combine. Form in to 4 patties.
  • Cook for 6-7 minutes if you like medium rare, and 8-9 minutes for medium - only flipping once! Always be sure to test your meat for doneness using a meat thermometer.
  • Remove green pepper from grill when charred, and burgers when they just come to temp. Your burgers will continue to cook when they come off the grill - so be mindful!

To serve:

  • Meanwhile, prep all other ingredients. Arrange toppings easily, so guests are able to assemble their own burger.
  • Top lettuce leaf with tzatziki, followed by a slice of pepper, then the burger, then any toppings your heart desires!
