These Grilled Zucchini, Halloumi, and Prosciutto Skewers are the perfect tasty nibble. Marinated zucchini is grilled until tender along with salty halloumi cheese. Both are threaded with prosciutto and served as a delicious appetizer.

If I had it my way, most meals would be served as appetizers. There’s nothing I love more than having a bite of this, and a nibble of that. Variety is the spice of life… Isn’t that what they say?

These handheld little bites are absolutely delicious! They feature tender summer zucchini which has been marinated and grilled. It’s smoky, tangy, and so delicious! Greek halloumi cheese is next, and has the apt nickname of being “squeaky cheese“. Pulling it all together is salty prosciutto. These three flavors and textures create an absolute symphony of delicious summertime flavor.

What Is Halloumi Cheese?

Halloumi cheese is a delicious Greek-style cheese that has been made from sheep’s or goat’s milk and is formed into a block. It’s salty, dense, and I’ve previously mentioned, it “squeaks”! Not really being able to describe it any other way, it’s truly a cheese to try yourself!

Halloumi cheese is also known as the “grillable cheese“. Its low water content means it stays intact when taken to high heat. It’s perfect here, offering a nice salty and smoky bite to each skewer.

How To Make Grilled Zucchini, Halloumi, and Prosciutto Skewers

These skewers are the perfect bite! They include three distinct flavors that are packed with flavor:

  1. Marinated grilled zucchini. Slices of zucchini are marinated in a lemony marinade before getting charred on the grill. Tender, smoky, and mouthwatering.
  2. Halloumi cheese. Known as “squeaky cheese”, this salty and dense cheese grills wonderfully, its shape staying intact regardless of the heat. 
  3. Prosciutto. Salty, delicate, and delicious! This Italian dry-cured ham adds the right level of saltiness.

The Perfect Bite!

These skewers are the ideal nibble for a cocktail party or evening in. They’re delicious served warm or at room temperature, and pair perfectly with a crisp white wine. Don’t say I didn’t tell you so!

Grilled Zucchini, Halloumi, and Prosciutto Skewers

These Grilled Zucchini, Halloumi, and Prosciutto Skewers are the perfect tasty nibble. Marinated zucchini is grilled until tender along with salty halloumi cheese. Both are threaded with prosciutto and served as a delicious appetizer.

Ingredients

  • 2 small zucchini, sliced into 1/2 inch medallions
  • 1 Tbsp lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp fresh oregano, minced
  • 1/4 cup olive oil
  • 8 oz Halloumi cheese
  • 4 oz Prosciutto

Instructions

  • In a large glass bowl, combine lemon juice, garlic, oregano, and olive oil. Add a pinch of salt and pepper. Whisk until emulsified.
  • Add sliced zucchini, tossing to combine. Allow zucchini to marinate as you prepare the other ingredients.
  • Set a cast-iron pan over medium-high heat. Drizzle a small amount of olive oil over your halloumi cheese. If it comes in one large block, halve it horizontally so you have two pieces. Add to pan, and allow to grill until golden brown. Flip and repeat on the other side. It should take about 4-5 minutes per side.
  • Once halloumi is browned, remove it from the pan and slice into uniformly sized cubes.
  • Add marinated zucchini slices to the pan and cook for about 3 minutes on each side until golden brown and tender. Remove from pan and allow to slightly cool.
  • When ready to assemble, add one piece of prosciutto, followed by the zucchini, and ending with the halloumi cheese. Repeat until all ingredients are used.
