A Beautiful Summer Meal
When I want a comforting but light meal during the summer, I normally opt for dishes where vegetables take center stage. These Herbed Zucchini Rollups with Marinara are the perfect solution!
Tender zucchini is gently rolled with a creamy and herby cheese mixture, and is gently steamed in a pan of marinara. This dish is as beautiful as it is delicious, making it an excellent dinner option for entertaining. Read on to learn how to make this tasty summertime meal.
How To Make Herbed Zucchini Rollups
These zucchini rollups are so fun and simple to make. While you can certainly choose to use a knife to very carefully slice paper-thin ribbons of zucchini, I like using either my vegetable peeler or a mandoline for ease.
The thin ribbons of zucchini are topped with a dollop of a mixture made of ricotta cheese, shredded mozzarella cheese, Parmigiano Reggiano cheese, and herbs. They are gently rolled up and placed in a saute pan filled with marinara sauce. They are then gently steamed in the sauce, which infuses each rollup with more flavor.
Dinner Is Served!
This dish is absolutely stunning when garnished with fresh herbs, indicating the flavors that come with each bite. Serve it with a big green salad, thick slices of toasted bread, and your favorite bottle of wine (I love this dish with a light red, such as Pinot Noir or Grenache).

Herbed Zucchini Rollups with Marinara
Ingredients
- 2 medium zucchini, very thinly sliced with a vegetable peeler
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup Parmigiano Reggiano cheese
- 1 clove garlic, minced
- 1/2 tsp salt
- Freshly cracked pepper
- 1 tsp dried oregano
- 1 tsp dried basil
- 16 oz jarred or homemade marinara sauce
- Fresh oregano and basil to garnish
Instructions
- Using a vegetable slicer, start slicing very thin ribbons of zucchini lengthwise. If some tear, that's ok - they will still roll up just fine.
- In a medium bowl combine ricotta, mozzarella, Parmigiano Reggiano cheese, salt, pepper, and dried herbs.
- Lay one zucchini ribbon on your cutting board and spoon a small amount of the cheese mixture at one end. Carefully start wrapping the zucchini around the cheese until the zucchini is completely rolled up. Repeat.
- Add your marinara to a large saute pan. Add your zucchini roll-ups directly into the marinara, standing them up so you can see the ricotta mixture.
- Cook covered over medium heat for about 20 minutes, until zucchini is steamed and cooked through.
- Garnish with fresh herbs and enjoy!
