Peach Caprese Baguette Sandwich

Peach season is here, and I am enjoying it in a big way! When this time of year comes around, I tend to eat peaches morning, noon, and night. I love finding new delicious ways to eat them, although theyโ€™re pretty excellent eaten straight out of your hand!

One of my new favorite ways to eat them is this Peach Caprese Baguette Sandwich! It layers all the classic ingredients of a Caprese salad, layering in juicy fresh peaches to provide a sweet layer of flavor. Read on to learn more about these delicious summery sandwiches!

What Is Caprese?

Caprese salad is a classic Italian dish that features fresh tomatoes, fresh mozzarella, and peppery basil. Itโ€™s often drizzled with olive oil and at times balsamic vinegar, and finished with a sprinkling of salt and cracked pepper. Itโ€™s simple, flavorful, and so delicious! There are a number of dishes out there that feature be โ€œCaprese treatmentโ€œ, but one of my favorites is a baguette sandwich!

How To Make A Peach Caprese Baguette Sandwich

While the method of making these delicious baguette sandwiches couldnโ€™t be any easier, I have a few tips when sourcing ingredients to ensure youโ€™re getting the most delicious bite each time!

Ingredients

  1. Fresh mozzarella cheese: This soft and creamy version of the popular cheese is a non-negotiable for the sandwich! The flavor is mild, and the texture smooth: no substitution will do!
  2. Tomatoes: Asย the season progresses, I will likely be plucking fresh tomatoes from my own garden, but until then I will reach for Roma or tomatoes on the vine to slice for this sandwich.
  3. Peaches:ย The key to providing the delicious contrasting flavor will be in the ripeness of the fruit. Make sure youโ€™re grabbing peaches that are tender to the touch, and have a fragrant aroma.
  4. Fresh basil leaves: I personally grow basil in a pot on my deck, meaning I always have access to the peppery flavor that the delicate herb offers. Youโ€™ll want nice, large leaves to layer in this sandwich.
  5. Balsamic glaze:ย You can find this premade in the aisles of many grocery stores, but really all it is is reduced balsamic vinegar! Reduce one cup of the vinegar in a small sauce pan over medium heat until it is reduced by half and has thickened.
  6. Olive oil:ย With so few ingredients, I canโ€™t encourage you enough to source ย top quality olive oil. This is a recipe where you will really be able to taste it, so seeking out the good stuff is a great idea!
  7. Baguette: I like purchasing the kind that are โ€œtake and bakeโ€œ, meaning I control the crunchiness of the baguette! Some store-bought ones tend to be a little too chewy for my liking.

The Method

You got all of your ingredients, now comes the easy part! To assemble these delicious baguette sandwiches, all you will do is simply layer all of the ingredients in single layers, drizzled with balsamic glaze and olive oil, and sprinkle with salt and pepper. Thatโ€™s it!

Ingredients

  • 1 large baguette, halved and cut into quarters
  • 2 Roma tomatoes, sliced
  • 1-2 peaches, halved and sliced
  • 8 basil leaves
  • 4 oz fresh mozzarella sliced (you can find this pre-sliced which I highly recommend for ease!)
  • 1-2 Tbsp olive oil, for drizzling
  • Balsamic glaze, for drizzling
  • Salt and fresh cracked pepper

Instructions

  • Lay each baguette quarter open-faced on a cutting board.
  • Layer fresh mozzarella, sliced tomato, sliced peaches, and basil leaves on each baguette.
  • Drizzle with olive oil and balsamic glaze. Sprinkle with salt and fresh cracked pepper.
  • Top each sandwich with the other half of the baguette and serve! If transferring, roll each sandwich in wax or parchment paper and use a piece of twine or a rubber band to secure them.
