There is one flavor that perfectly signifies Fall: pumpkin! Come September 1st, menus everywhere suddenly explode with gourd flavored everything. And I’m not complaining!

Pumpkin’s distinct earthiness pairs perfectly with warming spices like cinnamon, nutmeg, and cloves. Today I’m going to focus on a delicious and comforting sweet treat for you to bake this weekend! How To Make Pumpkin Cream Cheese Muffins

Muffins are one of the easiest things to bake! A handful of ingredients are combined in measured amounts, spooned into a prepared muffin pan, and baked to perfection!

Flavor combinations are countless, whether you prefer fruits, spices, or perhaps something a little more savory!

The basic ingredients and any muffin recipe are:

  • Fat (butter or oil)
  • Flour
  • Sugar
  • Eggs
  • A leavening agent (baking soda and baking powder)

The “surprise” that is in each of these delicious muffins is a pillowy pocket of cream cheese! Offering a creamy bite, cream cheese is spooned into each muffin tin that has been filled with the batter, and topped with a small spoonful of the batter, covering the cream cheese. Once the muffins come out of the oven, you won’t even know what’s inside!

Pumpkin Cream Cheese Muffins

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup pumpkin
  • 1/2 cup sugar
  • 3/4 cup maple syrup
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 tsp vanilla
  • 1/4 cup milk
  • 2-3 oz cream cheese, softened

Instructions

  • Preheat oven to 350 degrees.
  • Combine all dry ingredients in a medium bowl.
  • In the bowl of a stand mixer (or bowl to use a hand mixer), combine pumpkin, sugar, maple syrup, eggs, oil, and vanilla until completely combined.
  • Add half the flour, mixing util combined. Then add milk, continuing to mix, ending with the remaining flour. Mix until flour is just incorporated.
  • Line a muffin pan with liners, and scoop batter about 1/2 way up. Add about 1/2 tsp of cream cheese to each muffin, and spoon extra batter over it to cover the cream cheese.
  • Bake for 20 minutes until baked through and a toothpick inserted comes out clean (avoid the center since you'll get cream cheese on the toothick!).
  • Allow to cool slightly before traversing to a cooling rack to cool completely.
