Ah, pasta salad. How I love thee.
It’s one of those things that will always be on the menu for a summer meal. And if you’re at a get together where people are just “bringing a dish to share”, chances are high there are about 9 pasta salads to choose from.
That, and about 15 bags of chips. Don’t be “that” person…
Be the person that brings pasta salad! And dare I say….the BEST pasta salad.
(Arrogant hair flip).
Really though, this pasta salad is such a crowd pleaser. I mean, who doesn’t love Greek food?! There’s so much good stuff going on here:
- Freshness from cherry tomatoes and crunchy cucumber.
- Salty bite from kalamatas olives and pepperocini.
- Creaminess from feta and Greek yogurt.
ALL THE INGREDIENTS. I want ’em ALL.
Orzo makes the perfect pasta for this salad, too. It’s small enough so you can get a perfect bite with each ingredient – every time. But of course, use whatever pasta is your favorite (or whatever’s in your pantry!).
You should know this about me by now, but I LOVE adding all sorts of herbs (and A LOT of them) to recipes like this.
Sure, mint would be fine on its own.
But I DARE you to add in a sprinkle of dill. A handful of parsley. Go on with your bad self and add to your heart’s content!
(Which for me is absolutely an aggressive amount. But you do you.)

Greek Orzo Salad with Lemony Dill Yogurt Dressing
Ingredients
For pasta salad:
- 1 1/2 Cup Orzo, Uncooked
- 1/2 Cup Red pepper, Chopped
- 1 Cup Cucumber, Chopped
- 1 Cup Dill, Chopped
- 1/2 Cup Fresh mint, Chopped
- 1/4 Cup Kalamata olives, Pitted and chopped
- 1/4 Cup Pepperocini, Chopped
- 1/4 Large red onion Chopped
- 1 Cup Tomatoes, Chopped
- 16 Oz Feta cheese
For the lemony dill Greek yogurt dressing:
- 3/4 Cup Greek yogurt
- 1 Tbsp red wine vinegar
- 3 Tbsp olive oil
- 1/4 Cup Dill,
- 1 Clove of garlic
- 1/2 Tsp salt
- Juice of 1/2 a lemon
Instructions
For pasta salad:
- Cook orzo according to instructions on box.
- Meanwhile, chop the red pepper, cucumber, kalamata olives, pepperocini, red onion, and tomato in to bite size pieces. Chop the dill and mint. Place in large bowl.
- Once pasta is cooked, strain in colander, running cold water over pasta. Drain completely, pour over veggies.
For the lemony dill Greek yogurt dressing:
- In a blender, combine Greek yogurt, red wine vinegar, olive oil, dill, garlic, salt, and lemon juice. Blend until combined and slightly green.
- Pour dressing over veggie and orzo mixture, tossing to combine. Garnish with lemon slices and fresh dill.
