Roasted Cranberry and Goat Cheese Crostini
To me, there is no better appetizer than crostini. It can be completely personalized, making it a fantastic option to serve at a party.
However, something feels special about a platter of pre-assembled appetizers. Especially when they look as gorgeous as this!
What Is Crostini?
You may have heard the terms crostini and bruschetta and wondered, “What the heck are they, anyway?” The answer may not be what you think…
The term bruschetta has been tossed around and incorrectly interpreted as a tomato, basil, and garlic mixture. While this is an unbeatable mixture, it’s actually what is placed ONTO a bruschetta.
Both bruschetta and crostini are grilled pieces of bread that serve as the base for delicious toppings. Bruschetta technically is grilled bread rubbed with garlic. Both are delicious options, but the variety of toppings is where things get fun!
My favorite crostini or bruschetta combination includes:
- Spreadable or meltable cheese
- Raw, roasted, or grilled vegetables or fruit
- Fresh herbs
That’s it! Think about the number of options you could come up with based on the seasons….

Roasted Cranberry & Goat Cheese Crostini
Ingredients
- 1 lb fresh cranberries
- 1/4 cup olive oil, divided
- 2 Tbsp pure maple syrup
- 2 sprigs fresh rosemary, additional chopped for garnish
- 3 sprigs fresh thyme additional chopped for garnish
- 1 tsp salt
- 1/2 tsp freshly cracked pepper
- 1 baguette
- 6 oz goat cheese, room temperature
Instructions
- Preheat oven to 400 degrees.
- On a parchment lined baking sheet, add cranberries. Drizzle with 2 tablespoons of olive oil, maple syrup, sprinkle with salt and pepper, and nestle rosemary and thyme sprigs in to cranberries. Roast, stirring halfway through, for a total of 20 minutes. Cranberries will burst and reduce down. Add additional time if they need it!
- Meanwhile, slice baguette in to 1/4 inch slices. Brish with olive oil and sprinkle with salt and pepper. Broil until toasted, about 2 minutes per side.
- Once baguette has slightly cooled, spread each slice with goat cheese and top with roasted cranberries. Sprinkle with chopped rosemary and thyme to garnish.
