How To Make Shredded Barbecue Sandwiches

It couldn’t be simpler, and takes just 60 minutes to cook (that includes venting time too!). Don’t own an Instant Pot? No worries. How To Serve Shredded Barbecue Pork Sandwiches

When I think of the most delicious shredded barbecue pork sandwich I’ve ever had, it indefinitely includes coleslaw. But it can’t be just any coleslaw. It has to be homemade. Sorry, no way around it! Lucky for us, it couldn’t be easier to make! My version includes shredded green and red cabbage, carrot, and a tangy Greek yogurt-based dressing. Simple to make, and even more simple to devour.

I also can’t consider a barbecue pork sandwich delicious without copious amounts of pickles. The crunchier, the better!

If you’re looking for extra tangy flavor, I suggest adding pickled red onions to yours as well. They add a sour bite that can’t be replicated. 

Lastly, do yourself a favor and get a brioche bun. They’re tender, soft, and are the perfect delivery method for this juicy barbecue shredded pork to your mouth.

Shredded BBQ Pork Sandwiches

Ingredients

  • 4 cups shredded pork, see notes for link to recipe
  • 2 cups barbecue sauce
  • 8 brioche hamburger buns

For the slaw:

  • 1 cup green cabbage, chopped
  • 1 cup red cabbage, chopped
  • 1 carrot, peeled
  • 1/3 cup greek yogurt
  • 2 Tbsp mayonnaise
  • 2 Tbsp apple cider vinegar
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper

To serve:

  • Pickles
  • Pickled Red Onion

Instructions

  • Preheat oven to 400 degrees. Add cooked shredded pork to a baking dish and cover with tin foil. Bake for 15 minutes as you prepare the other ingredients.

For the slaw:

  • Add cabbages and carrot to a large bowl.
  • Add remaining ingredients to a mason jar and shake to combine. Pour over cabbage and carrot mixture, tossing to coat completely.

To serve:

  • Remove pork from the oven and add barbecue sauce. Mix completely to combine. Add barbecue pork to the bottoms of buns and top with coleslaw. Serve with pickles and pickled red onions.
