Smoky Balsamic Onion Jam

Prep Time15 minutes
Cook Time1 hour
Course: Appetizer
Cuisine: American
Keyword: Balsamic Vinegar, Jam, Onion Jam, Onions, Smoked sea salt

Ingredients

  • 2 Tbsp olive oil
  • 1 Tbsp unsalted butter
  • 1 1/2 lbs yellow onions
  • 1 tsp sugar
  • 1/2 tsp smoked sea salt
  • 3 Tbsp balsamic vinegar
  • Dash Liquid smoke, optional

Instructions

  • Heat a medium pot (preferably cast iron) over medium heat. Add olive oil and butter.
  • Slice onions into 1/4 inch strips. Add to pan. Sprinkle sugar and smoked sea salt and toss thoroughly to combine.
  • Stir sporadically for the next 45-60 minutes. Onions will slowly start to brown, which means they're caramelizing. This is what you want!
  • Once onions are a deep golden brown hue, remove from heat. Add balsamic vinegar and stir to combine. If you'd like added smokiness, feel free to add in a dash of liquid smoke.
  • Allow to completely cool before transferring to a glass jar to store in your refrigerator. Jam should keep for up to 2 weeks.
