I absolutely love this time of year.
I have so many fond memories of Easter with my family as I was growing up.
The celebrating.
That new Easter outfit.
The delicious food.
That post-dinner walk around the lake.
It all is seared in my mind, and I feel very nostalgic this time of year. One of my favorite things about Easter bunch or supper is the salad.
I know, I know. There are so many better things on the Easter table to LOVE other than salad. But just stay with me here….
Of all the things that join the salad, such as the cheesy potatoes, ham, roasted carrots, and hot cross buns, the salad is the true center stone that showcases this season’s finest fresh produce.
Crunchy, fresh veg only gets better when tossed with a simple herby dressing, like so:
I particularly love this Spring Salad with Buttermilk Herb Dressing because of the variety of textures and flavors:
- Tender butter lettuce
- Crunchy and peppery radishes
- Sweet and delicate pea pods
- Distinctive green onions
It’s simple, light, and not too many ingredients.
But considering the aforementioned menu, I think we could all do well with a little green on our plate.
The Buttermilk Herb Dressing is absolutely mind-blowing. It combines greek yogurt, buttermilk, a dab of mayo, a variety of herbs, and a solid dose of garlic. You could alter the ingredient ratio (i.e. add more greek yogurt and mayo) and use this on a veggie platter as a dip.

Feel free to add in whatever veg you have on hand to this salad as well! Cucumbers, thinly sliced carrots, mushrooms….all would fit beautiful in this gorgeous Spring Salad.

Spring Salad with Buttermilk Herb Dressing
Ingredients
For the Buttermilk Herb Dressing
- 3/4 cup Greek yogurt
- 1/2 cup buttermilk
- 1 Tbsp mayonnaise
- 1 Tbsp fresh dill
- 1 Tbsp fresh parsley
- 1 clove garlic
- 1 tsp Bragg's aminos
- 1/2 tsp salt
- 1/2 tsp fresh ground black pepper
- 10 oz fresh butter lettuce (Or 2 large heads)
- 2-3 Radishes thinly sliced
- 1/2 cup pea pods
- 1-2 Tbsp Chopped green onions,
Instructions
For the Buttermilk Herb Dressing
- Combine all ingredients for dressing in blender, and use until thoroughly combined. Taste and season as needed.
- Wash butter lettuce, radishes, and pea pods. Use salad spinner to thoroughly dry lettuce, or blot with towel.
- Chop butter lettuce in to bit sized pieces, place in large salad bowl.
- Thinly slice radish, using a mandolin if available (see link below!). Scatter on top of lettuce.
- Feel free to split your pea pods for presentation, or simply top the lettuce and radishes with them.
- Serve with dressing either drizzled over the salad, or alongside for serving. Top salad with green onions and fresh cracked pepper.
