It’s Springtime! With that comes sunshine, flowers, and bright ingredients to work with. Today I’m sharing a recipe for a very special drink that I hold very close to my heart: The Spicy Bunny!

I have a pretty intense obsession with bunnies, so naming this spicy and bubbly cocktail was all too simple. Read on to learn more about this pretty sip that’s perfect for Easter!

How To Make The Spicy Bunny

This Spicy Bunny cocktail is a carrot ginger mimosa. A traditional mimosa combines orange juice and sparkling wine, making for a refreshing and tart sipper. 

My version (which is perfect for Easter!) features a fresh carrot and ginger juice which is mixed with sparkling wine. If you can find carrot and ginger juice pre-made, that’s an easy shortcut! If you have a juicer though, time to use it! Here’s what you’ll need:

  • 6-7 large carrots, scrubbed to remove any grit
  • A 3 inch piece of ginger

That’s it! These two ingredients go straight in to your juicer, and yield a sweet, earthy, and spicy juice. 

To make a Spicy Bunny:

  1. Pour 1 ounce of carrot ginger in to a Champagne flute
  2. Top with chilled champagne or Prosecco
  3. Cheers!

Ingredients

  • 6-7 large carrots
  • 3 inch piece ginger
  • Champagne or Prosecco

Instructions

  • Scrub your carrots and peel the majority of the skin from your piece of ginger. Process in your juicer, according to manufacturer's instructions. You should have close to 15 ounces of juice, which should 12 or more cocktails - depending how much juice you like in your mimosa!
  • Pour 1-2 ounces of carrot ginger juice in to a champagne flute (less or more, as desired!). Top off with chilled champagne or prosecco.

Notes

This recipe calls for making your own carrot and ginger juice. If you don't have a juicer, check out a local juice shop or grocery store to see if they carry a similar juice!
