Time to stock the freezer with delicious and simple meals and snacks for postpartum life! Snacks, simple meals, and prepped ingredients that make meal time a cinch!

When a life changing event like having a baby happens, the seemingly easy task of feeding oneself can become the most challenging feat. Whether for yourself or a loved one, stocking the freezer in advance with wholesome, delicious, and satisfying food makes life a little simpler. From warm and cozy suppers, big batches of versatile protein, sweet bites to support milk production (for those breastfeeding), or one-handed meals, this collection of recipes is everything I personally stocked my freezer with as we wait for our little one to arrive.

Garlicky White Bean & Chicken Enchiladas : Saucy, cheesy, and protein-packed! These enchiladas combine white beans and shredded chicken with salsa verde and pepper jack cheese. I’ve been making these enchiladas for over a decade, and they still are a favorite! Serve with sour cream, cilantro, and guacamole.

Freezer Breakfast Sandwiches: Stocking the freezer with breakfast sandwiches was a non-negotiable for me. These one-handed, grab and heat breakfasts will be perfect after sleepless nights. I made two versions: one including chicken sausage, egg, and cheese, and the other includes feta, sun-dried tomatoes, and spinach.

No-Bake Peanut Butter Chocolate Chip Lactation Bites: Brewer’s yeast is thought to support optimal milk production, making these little bites the perfect snack. They’re satiating, nutrient and calorie dense, and just taste GOOD. You can switch up the ingredients (choose your favorite nut butter, add in dried fruit, etc.) to make them your own.

The Tastiest Instant Pot Shredded Pork: This shredded pork is one of the few things I consistently use my Instant Pot for! It’s so convenient, and I can’t believe how delicious and tender the results are – and so quickly! When I’m prepping ingredients for the week to make tasty meals with, this recipe is definitely one of my go-to’s. Shredded pork freezes amazingly as well, making it an ideal thing to stock my freezer with for the summer. Delicious for Shredded Barbecue Pork Sandwiches, Carnitas Tacos with Spicy Avocado Crema, or Báhn Mì Bowls!

This Instant Pot Shredded Pork is the tastiest! In just 1 hour you can have tender and tasty shredded pork. Perfect for barbecue sandwiches, tacos, or bowl!

Sheetpan Chicken Fajitas: This freezer meal couldn’t be any easier! Taco seasoning (I love Siete brand!), lime juice, and olive oil are all you need to marinate your chicken. Add it to a freezer gallon bag, along with sliced bell peppers and sliced red onion. Thaw it for at least 8 hours, dump onto a baking sheet, and dinner will be ready in 15 minutes! Serve with tortillas, sour cream, cheese, guac, and shredded lettuce. Yum!!

Baked Macaroni and Cheese: Who doesn’t love Mac and cheese? I know this is going to hit the spot come Fall when I need something cozy and satisfying for supper. I tend to have a variety of cheeses in my fridge at all times, so this is a great way to use up what you have! I will be making several pans of macaroni and cheese 😉

Smoothie Packs: Pre-portioning frozen ingredients for smoothies makes making a fast, nutrient dense breakfast a cinch (especially if you’re having someone else make it for you!). I like adding frozen bananas, cauliflower, avocado, berries, greens, and dates (not necessarily all of these together!) to silicone freezer-friendly bags for easy smoothie making. Add 1 cup or your favorite milk, juice, or water, and a scoop of protein. Smoothie perfection!

A MASSIVE Collection of Meatballs! Meatballs are my favorite thing to meal prep: they’re easy to make, completely customizable, and make the quickest meals. Whether you add them to jarred marinara sauce, make a greek bowl with rice and hummus, or drizzle them with your favorite sauce, meatballs are my go-to protein int he freezer when I need a delicious meal fast.

Lactation Banana Oat Breakfast Cups: These little oatmeal breakfast cups are absolutely delicious and so simple to make! They’re egg-free and made with brewer’s yeast, which is thought to support healthy milk production for breastfeeding moms. It can absolutely be omitted – these are still such a great on-the-go (or one-handed!) breakfast or snack!

Chocolate Covered Peanut Butter Dates: These sweet treats are ideal for anyone, but dates are thought to help prepare the cervix for birth, making them a delicious sweet treat for expecting mothers. Stuff them with peanut butter (or your favorite nut or seed butter), top with a peanut, and drizzle or dip in dark chocolate. Sprinkle with some Maldon salt and stash them in the freezer to munch on when your sweet tooth strikes!

Roasted Vegetable Stuffed Shells: These tasty veggie-packed stuffed shells are the recipe I always make when friends are expecting. What a full circle moment to making them for myself! Roasted vegetables (choose your favorites!), marinara sauce, and plenty of cheese. These are so good!

Stock That Freezer!

Even if you aren’t in full-blown prep and nesting mode like I’ve been with the anticipated arrival of our babe, these recipes are perfect for all! Nothing beats that feeling of realizing you have meals, snacks, and easy-to-grab bites at the ready.

  1. Hi! Congrats on getting to 40 weeks! Hoping for a safe and smooth delivery for you. Are both the enchiladas and shells freezable? If so, do you freeze before or after baking?

    1. Thank you so much for the kind words, Klara! Great questions. I’ll freeze both dishes prior to baking! I’ll just thaw each in the fridge for about 8 hours, then bake from there. I hope you enjoy!
