I love mixing a variety of vegetables, fruit, and fresh herbs in dishes I prepare when the heat is sweltering, like this Summer Salad with Blackberries, Pistachios, and Dill! How To Make A Summer Salad

Making a salad fit for this time of year is incredibly simple. I like to use the following ratio to make a salad for two. You can always adjust the amounts if you have more mouths to feed!

  1. 3 cups greens of your choosing
  2. 1 cup of fresh fruit
  3. 1/3 cup fresh herbs
  4. 1/4 cup something crunchy 

The beauty of a salad like this is, of course, the fact that you can customize it any way you like! Love fruit? Add two types! Want protein? Add chicken! Love cheese? Sprinkle on your favorite. Use the above ratio as a start and customize away.

Ingredients

  • 3 cups mixed greens
  • 1 cup blackberries
  • 1/3 cup fresh dill
  • 1/4 cup shelled pistachios, roasted & unsalted

For the vinaigrette:

  • 1 Tbsp grainy mustard
  • 1 tsp apple cider vinegar
  • 1/4 tsp Bragg's aminos (or soy sauce)
  • 1/8 cup olive oil
  • Fresh cracked pepper

Instructions

  • In a large bowl, combine mixed greens, blackberries, and fresh dill.
  • In a small jar, combine all vinaigrette ingredients. Shake to combine.
  • Dress salad, and toss to combine. Top with shelled pistachios, salt, and pepper.
