I originally made this sultry, spicy sipper for Club Date Night, which my friends over at Maven Styling hosted a couple months ago. For weeks, they hosted a date night for you and your sweetie so you didn’t have to stop “dating each other” in quarantine. How cute! Every week subscribers were sent cocktail recipes, a playlist, and a fun game or activity to do together. They also offered discounts to local restaurants and dessert spots to round out date night in.

While they’ve stopped hosting these weekly date nights, that’s no reason to not plan a little date night in yourself:

  1. Make this cocktail for your sweetheart
  2. Look up a fun card game, make a summer bucket list, play your favorite records…you choose the fun!

How To Make This Cocktail

Akin to a Moscow Mule, this fabulous drink combined lime and ginger in a concentrate that you’ll mix with your liquor of choice (I suggest vodka or whiskey!).

Ginger Lime Concentrate

This is what really takes The Amorous Immured to the next level: the Ginger Lime Concentrate. Potent fresh ginger is grated and blended with sugar, tart lime juice, and water. The end result? A puckery, spicy, lip smacking concentrate that goes down a little too smooth. Better make a double batch!

This would be equally delicious without the alcohol! Simply omit the alcohol in this recipe, double the concentrate, and top of seltzer. Refreshment, served.

Ingredients

  • For the cocktail:
  • 1 oz Ginger Lime concentrate recipe below
  • 1 ½ oz vodka or whiskey
  • oz simple syrup optional (see note)
  • Sparkling water optional to top
  • For the Ginger Lime Concentrate:
  • 2 Tbsp fresh ginger grated (see note)
  • cup sugar
  • 1 cup freshly squeezed lime juice
  • 2 cups water

Instructions

  • For the cocktail:
  • In an ice filled cocktail shaker, add Ginger Lime concentrate, vodka or whiskey, and simple syrup if using. Shake thoroughly to combine until cocktail shaker is too cold to handle.
  • Pour into a coup glass, garnish with lime slice.
  • For the Ginger Lime Concentrate:
  • Add sugar to blender or food processor, processing until super fine.
  • Add water, grated ginger, and lime juice. Process until combined.
  • Set a strainer lined with cheese cloth over a mason jar. Pour ginger mixture in to jar. Squeeze cheese cloth to release all liquid.
  • Refrigerate until ready to use. Concentrate will keep in refrigerator up to 2 weeks.

Notes

Notes:
If you like things extra spicy and gingery like I do, consider doubling the amount of ginger the original recipe calls for!
The cocktail is fairly tart as it's written. If you prefer things sweeter, consider adding ½ ounce of simple syrup.
To do so, mix equal parts water and sugar in a saucepan set over medium heat (1:1 cups will make plenty of syrup!).
Swirl pan until sugar is dissolved. Allow to cool and store in refrigerator until ready to use.
